In case of 11. cxd5, Black would obtain good play with 11Bf5. The bishop
move protects the e4-knight and threatens to discover an attack on the
White queen (12Nxg3, 12Nxc3, 12Nxf2).
White realized that what really matters is that he has a slight lead in
development. Four of his pieces are out, compared with three for Black.
That didnt change after 10exd5 because the capture is not a developing
move.
Black believed he had made a forcing move. But even in a complex position
like this, development matters more.
11. O-O-O!!
Castling like this is the kind of magic-move that some amateurs marvel at.
But it isnt magic. Its appreciating how development beats material once
again. Because of the threat of 12. Nxd5!, Black has no time for 11Bf5,
not to mention 11Nxf2. He chose to get rid of the White knights:

13. Qxc3!
Black doesnt have a good alternative (13d4 14. exd4 Nc6 15. Qe3+!) so
he went into the worse endgame.

Black will lose the d6-pawn and material will become equal. But Whites
active pieces, particularly the two bishops, confer a huge edge. He has a
choice of strong continuations, e.g. 15Nc6 and now 16. Bxd6 b6 17. Rd2
and Rhd1 or 16. Rxd6 and 17. Rhd1 are both strong.
