Ingredients:

Olive oil
1/2 white/yellow onion, chopped
1 bay leaf
8 grape tomatoes, cut in half
1/2 roasted chicken breast (from store), shredded
1/2 cup shells
1/2 cup frozen mixed vegetable
Italian seasonings
Salt to taste
Black Pepper
Chicken or vegetable stock

Method:

1.  In a medium size saucepan, add in some olive oil, about 1-2 Tbsp.  Add in onion and stir-fry until
fragrant.  Add in bay leaf, stir-well.  Add in grape tomatoes and stir-well.

2.  Add in frozen mixed vegetable and shredded chicken breast, stir well.  Add a little salt to season the
ingredients.  Add in chicken or vegetable stock, quite a lot because it is a soup and you want to cook the
shell pasta too.

3.  Add in the shell pasta, stir and let it simmer until the pasta is cooked.  Season to taste with Italian
seasonings and black pepper.

4.  Take out the bay leaf before serving.

Easy Chicken and Broccoli Soup

I thought spring was finally here but I was wrong.  The temperatures dropped again to a high of 44
degrees! That is alright though, as long as the cold weather is around I will continue to enjoy making my
chicken and broccoli soup!

This is an easy way to make Chicken and Broccoli Soup without having to prep and slow cook everything
for hours.

Serves 2 or 3 people

source: my own creation

 2 Boneless Skinless Chicken Breasts

 2 c Broccoli Florets (frozen or fresh)
 3/4 lb Macaroni
 48 oz Chicken Broth (resealable box)
 Grated Parmesan
 Salt
 Pepper

1. Start off by bringing a pot of water to a boil for your macaroni.  Boil until they are fully cooked or
soft enough for your liking.
2. You can also begin to boil your chicken breasts in the entire box of chicken broth, 48oz.  Once
fully cooked, about 10 to 15 minutes, you can remove the chicken and begin to shred it by
scraping it with a fork. If you have a small processor you can shred it quickly in there, becareful
not to shred it to much.  Do not drain the broth either because we will be adding the chopped
broccoli, macaroni and chicken back into that pot.
3. While your chicken is boiling you can also go ahead and boil your broccoli in a separate pot. I do
not like cooking the broccoli in the broth because the flavor of the broccoli can over power the
broth.  Once the broccoli is soft you can drain and chop them to smaller pieces before adding
into the broth.
4. Add everything back into the pot of broth and let simmer for another 5 minutes for the flavors
to join.
5. Serve the soup and top it with grated Parmesan cheese, salt and pepper

Easy Breakfast Sausage Recipe

Eggs over Italian Sausage is great cure for any hangover.  I just went to a wedding and Sunday morning I
really needed a good pick me up.  Researchers have said that high protein foods like eggs, bacon and
sausage are the best hangover cure.  This is an easy breakfast recipe that is not so healthy but tastes
great.  Servers 2

 4 Large Eggs
 Bob Evan’s Italian Sausage
 Italian Seasoning
 Salt
 Pepper

1. Start off by preheating your pan or large skillet on medium heat.

2. Unwrap your Italian sausage and throw it into the pan.  Be sure to fully cook the meat and even
brown it a bit.  I like to chop it up into small pieces like you would do with ground beef when you
are making taco meat.
3. While that is cooking you can prepare your eggs in a different pan or on the other side of the
large skillet. Mix in some salt, pepper and Italian seasoning.  Cook your eggs any way you wish,
scrambled, over easy, etc.
4. Once your Italian sausage and eggs are done place them together on a dish and enjoy with
ketchup and a piece of toast.
Easy Turkey Burger Recipe

Four Cheese Turkey Burger is something I came up with last night.  I had a few Purdue Turkey Burger
patties left over from tailgating at the Phillies game this past weekend.  The Turkey Burgers needed a
little bit of flavor to them.  Check out this mouthwatering Four Cheese Turkey Burger.

Makes 3 Burgers

 1lb Ground Turkey

 Bag of Shredded Four Cheese Blend (1.5 cups)
 3 tbs Garlic Powder
 3 tbs Italian Seasoning
 Salt

1. Fire up the Grill or George Foreman to get that preheated.

2. Split your ground turkey into 3 even sections.  Top each section off with a 1/2 a cup of cheese, 1
tbs of garlic powder, 1 tbs of Italian seasoning and a pinch of salt.
3. Mash all of the ingredients into the ground turkey by kneading, once everything is mixed well
you can mold the meat into a hamburger Pattie.
4. Once all of their burgers are formed you can bring them over to the grill and cook them to your
liking!
5. Instead of using ketchup I placed my homemade hot sauce in between the first and second
Pattie!
Ingredients:

1 LB. ground beef /500 grams

1 small onion, finely chopped
1/2 small green bell pepper, finely chopped
1 tsp. Brown sugar
1 tsp. mustard, yellow
1 TB. garlic powder
1 tsp. Salt
1 tsp. black pepper
1-2 tsp. cayenne (adjust to your taste)
splash Worcester sauce
2 cans tomato paste ( 230 grams total or 8 oz)
4 TB. Tomato puree
Olive oil or sunflower oil
Hamburger buns
Water or broth* see step 3

1. Chop the onion and bell pepper. In a large pan heat the oil , add both the onion and green pepper and
cook until both are soft. Next add the crumbled ground beef and fry until the meat has cooked through.
Once the beef is done drain all the fat from the pan.
2. Add all of the spices and mix thoroughly, lastly add the tomato paste and puree. Once again stir to
combine all of the ingredients thoroughly.
3. If you want to you can serve the Sloppy Joes right away. Otherwise cover and simmer for 20 minutes
or longer. Cooking longer will allow the flavors to really come together. Check on the mixture often to
prevent burning. If the sauce begins to dry out too much add a little bit of water or broth at a time to
prevent burning.
