The purpose of this assignment is for you to investigate the entire process for a specific food product to help you understand how a Food Safety
Management Plan would be constructed using the principles of HACCP. For this assignment we will be discussing Dairy Operations (for simplicity).
Handouts will be uploaded for easy reference as we discuss in class. You are responsible for completing this document as information is presented
during lecture.

Please enter all information on a printed copy. This will be due on the last day of class or in my box the Friday before Finals week.
