CHAPTER I

THE PROBLEM AND ITS BACKGROUND

A. INTRODUCTION

Cold weather affects the ice-cream vendors in different aspects of their lives.

Usually, as the weather shifts into coldness, their daily profits are being affected as

people are not being tempted to buy their products. Even the weather is not good,

majority of ice cream vendors are still pushing their products into the streets as this is the

only source of income that they have. People are craving for foods or drinks that could

heat their body up during this weather. That will really despair the livelihood of ice cream

E.THEORETICAL FRAMEWORK

The Ice Cream Theory by: Steff Deschenesof Lewiston

is a cozy, upbeat book that tells us a lot about people vanilla, chocolate, strawberry, even

pistachio and how we often interact. Most of all, it offers fresh, insightful looks at

ourselves. Seldom has a book with ice cream as its central metaphor been so endearingly

warm. The author, Steff Deschenes of Lewiston, describes herself as “a self-taught ice-

cream guru” and her discoveries at home and on the road in this country and Europe bear

her out. She spent about six years working on “The Ice Cream Theory.” Rarely does a
4

self-help book aimed at sharpening our insights come together so well. Let’s start with

the journey that led Deschenes to a very special gift an ice-cream maker one Christmas.

“Upon opening the box of my new toy, I suddenly foresaw myself as the next ‘big thing’

in ice cream,” she tells us. “If two hippies from Vermont with no formal education could

do it, or if some guy from New York could make up two words that looked European but,

well, were just made-up words to start his company, then surely I, a slightly obsessive-

compulsive ice-cream overeater and wannabe theologian, could do it.” Like many

youthful ambitions, that’s pretty much where the story of “Steff Deschenes, Ice Cream

Entrepreneur” begins and ends. “It died such a nice thought,” Deschenes recalls. “I have

made ice cream exactly a dozen times since getting the maker. Life, as it has a habit of

doing, has simply gotten in the way and has prevented me from becoming the ‘next big

thing’ in ice-cream making.” It has not stopped her, however, from looking at ice cream

in new and insightful ways. Take pistachio, for instance. “Pistachio ice cream to me has

always been associated with family,” she writes. “My grandfather loved pistachio ice

cream. It was his favorite flavor. And although he was diabetic, it was his choice treat

when cheating on his diet. If pistachio ice cream were a person, trust me when I tell you,

it would be him.” OK, so grandfather liked pistachio and Deschenes assigns the flavor to

him. Oops, not so fast, the author insists. That’s not how her theory works. “Your favorite

flavor of ice cream,” she emphasizes, “is not the flavor you metaphorically are.” Looking

more closely at pistachio ice cream, she assigns it certain qualities. “It is one of the ice

creams I believe is true to its ingredients and, furthermore, a constant, solid flavor it

doesn’t vary too much from brand to brand. It’s a mellow flavor, nothing over-the-top or

confusing about it, and it’s its simplicity that I think is appreciated and celebrated by
5

fans. Pistachio ice cream does not try and hide the fact that it’s pistachio.” People, she

writes, frequently share with her the flavor they believe sums up their personality and

place in the world. Sometimes the flavor they cite is rum raisin. Not a great choice,

Deschenes counsels. Rum raisin, she writes, “is not a flavor you want to be. Rum raisin

wants to be the life of the party, but it can’t be. And it never will be.” If that seems like a

harsh assessment, Deschenes goes on to explain. “Most companies, you realize, are too

cheap to put any real rum in their ice cream, so it’s an artificial flavoring. If you’re the

kind of person who thinks they are way cooler than they actually are, and, for the most

part, are pretty much fake and shallow, then, yeah, I guess you might be rum raisin.”

Ice cream is made from dairy products such as milk and cream. With the

combination of fruits and other flavor. It is also combined with nuts and most often

chocolates. It is sweetened with sugar or sugar substitutes. The mixture is evenly stirred

to prevent open spaces and cooled below freezing point to prevent detectable ice cream

crystals from foaming. The result is a smooth solid foam. You have to have a push cart or

truck to get started in a mobile ice cream business. Usually the ice cream is a home made

one. Very simple flavor of chocates, cheese and other common flavoring. It is related to

our topic because it tackles also ice cream and the different flavors same as different

types attitudes of an ice cream vendors. During cold weather ice cream is still saleable

but not the same in summer. We are fond of eating sweets regardless of the weather.

REVIEW OF RELATED LITERATURE

A. FOREIGN LITERATURE

University of Delaware students can study 125 different subjects, but now there's

an unofficial new major students can pursue: ice cream. Ice cream is serious work for

students at the university, which has an agriculture school and its own herd of dairy cows.

The school opened a campus ice cream store earlier this year, and students are now

involved in nearly every part of the production process, from milking the cows to

developing flavors and scooping ice cream. The University of Delaware is hardly the first

school to have a creamery, the more technical name for the ice cream store since it

produces its own product on site. Penn State opened a creamery in 1865 and sells some

750,000 scoops a year. About two dozen other universities from the University of

Connecticut to the University of Wisconsin also have creamery operations, producing ice

cream or other dairy products such as yogurt and cheese. But Delaware's decision to open

a new creamery is unusual, said Thomas Palchak, the creamery manager at Penn State

since 1986. Palchak said that at one time, 50 universities had creameries, but they began

closing from the 1950s through the 1970s because of the cost of modernizing them even

as fewer students pursued dairy industry careers. Everyone has always said, `Why don't

we start a creamery?' "said Sims, the college's deputy dean who helped get a $400,000

grant to start the creamery. Now, the creamery's 25 student employees do much of the ice

cream making. Students help milk the school's 100 dairy cows twice a day. A tanker

truck picks up the milk and transports it to a dairy. It returns as ice cream base, a
8

sweetened liquid about the thickness of buttermilk. That's when students take over.

Students make hundreds of pounds of ice cream daily and sell some 18,000 scoops a

month.

B. LOCAL LITERATURE

The demand of ice cream increases during the months of summer. It also demands

during festivals, birthday parties and many more. Ice cream has a great part in every

occasions. Even when it is rainy days the demand of ice cream still remains. Ice cream is

extremely associated as happy and joyful desert. It became the stress reliever of many so

whenever they are stressed and they wanted to reward themselves an ice cream to relieve

stress and the demand of ice cream is continually increases. Ice cream in the Philippines

reports the offers of the sizes and the shape of one’s market in a national level. It gives

the newest data of retail sales of 2010-2014, that allows you to know the growth of

driving sectors. It distinguish the top companies, the top brands and proposes different

strategic analysis of the key factors that can greatly influence the market and can

formulate new product developments, distribution or issues in pricing. Sorbets is peddled

by a “sorbetero” using colourful hand-painted wooden carts which usally contained only

three flavors, each in a large metal canister. The cart stuffed with “dry ice” sprinkled with

salt to pruduce lower tempreture around the metal canisters and keep the ice cream frozen

longer. These peddlers usually get their cart from the manufacturers of the local ice cream

and walk the streets the whole day, calling the attention of consumers by ringing their

hand-held bell. Peddlers of sorbets do various serving options. It may be served sugar

cone or bread bun at different prices. A serving one flavor of your choice or a

combination of all available flavors.
