1.In a pot, let some water boil with salt. Once boiled, add to it some
wholegrain pasta and stir for about 30 seconds to stop the pasta from
sticking, Let the pasta boll for eight minutes then set it aside.
2. You want to make sure that your pasta remains firm as you will
cook it for a further two minutes later. In a new pot, add onions,
sunflower oil and salt. Try not to overcook the onions.
3. Add green peppers and sauté for a further two minutes, adding salt
to taste as you go along. This helps reduce the sharpness of the
peppers. Add the chicken breast and cook for about three minutes.
4. Now add the red peppers and cook for approximately four minutes.
You want the peppers to soften slightly but not have them mushy.
5. Toss in the cooked pasta and mix it in, trying not to break the
pasta as you do so. Allow the pasta to warm through for about
two minutes.
6. Add basil right before you serve and fold into the chicken,
vegetable and pasta mix, then serve.
