Cellulose is … … simple sugars composed of the elements carbon, hydrogen
and oxygen only
Glycogen is … … an insoluble storage polysaccharide in plants
Starch is … ... disaccharide sugars
Monosaccharides are … … a polysaccharide found in cell walls

a) amino acids [1]

b)

i keratin [1]

ii collagen [1]

iii haemoglobin [1]

c) Biuret reagent [1]

d) Add a few drops of Biuret solution to the sample (1 mark). Observe any change
in colour (1 mark). (Students do not earn the second mark if they refer to heating or
shaking the solution.) [2]

Tube 2 turns orange, which shows that there is some glucose present.

Tube 3 turns dark red, which shows there is a high concentration of glucose in the
sample.

d) Iodine solution would be added (1 mark). The iodine solution would change from
red-brown to blue-black if starch was present (1 mark). [2]

e) Glucose is a single monosaccharide molecule (1 mark). Starch is a polymer

composed of many monosaccharide (glucose) molecules bonded together
(1 mark). [2]

a) X: enzyme; Y: active site [2]

b) A is the correct substrate (1 mark) as it has the correct/complementary shape to fit

into the active site (1 mark). [2]

c) The active site of the enzyme has a particular shape (1 mark). Only a substrate
(key) with the correct shape (1 mark) can fit into the active site (lock) (1 mark). [3]

d) Denaturing means the enzyme permanently changes shape so the active site
cannot function. [1]

e) Enzymes can be denatured if the temperature is too high (1 mark) or if the pH is too
high or too low (1 mark). [2]

5 1 mark for each blank correctly completed as shown: [8]
