Laboratory Activity No 8-Group 2
Laboratory Activity No 8-Group 2
Introduction:
Animals are killed humanely for food when they are slaughtered or butchered. All procedures that
modify fresh meat fall under the category of "meat processing," with the exception of
straightforward mechanical procedures like cutting, grinding, or mixing. As soon as humanity
recognized that heating and salting fresh meat extends its shelf life, meat processing was invented.
And marketing, which includes market research and advertising, is the activity or business of
promoting and selling goods or services. The killing and preparation of farm animals' flesh will come
as the final step after they have been grown. Food security is the reason behind this. Live animals,
meat, and processed meat can all be sold.
Objectives:
Materials:
Learning Center or Campus Library/ Internet source
Paper and ballpen.
Methodology:
a. Non-fat milk
- Non-fat milk, commonly known as skim milk, is cow milk that has had the majority of its fat
content removed.
b. Low-Fat milk
- Low milk fat is described as having a milk fat level that is much lower than the breed standard
and may have inverted milk protein and fat content.
d. Comminuted meat
- Food item produced by mechanically separating connected skeletal muscle from bone in the
carcasses of cattle or birds.
e. Restructed meat
- For retail customers and institutional food preparation, restructured meat is ground, flaked, or
diced into items that resemble steaks, chops, or roasts.
f. Entrails
- The animal's interior organs, particularly the intestines.
g. Giblets
- The organs you take from a chicken or other bird before cooking and eating them, such as the
heart and liver.
h. Albumen
- The gelatinous layer that surrounds the yolk of an egg and serves as both food and protection is
called the white.
i. Yolk
- The yolk, which is an egg's main component and can be differentiated from the white.
2. a. Give 3 processed food products you can make from meat (choose either beef, pork or
chicken), milk, and eggs.
b. For each type of food product, give at least 3 commercial food products you can find in the
grocery stores or supermarkets.
c. Write the name of the product, the type of product, and what is its main raw material.
Include also pictures of your commercial food products.
d. Tabulate these into one table only.

QUESTION:
1. What is/are the purpose/s of processing these animal food products into processed foods?
Answers:
Processing eliminates dangerous bacteria, enhancing or even guaranteeing food safety. The three
primary techniques are pasteurization, airtight packing, and preservative usage. The availability of
ready meals, bagged salads, sliced and canned fruits and vegetables, and other quick-to-prepare
foods that can be enjoyed "on the go" thanks to processing and packaging technology, helps to meet
the time restrictions of the contemporary world. In this approach, processing lengthens the food's
shelf life and reduces waste, bringing down the overall cost of food production.
