Maggi Noodles
I’d like to talk about a noodle dish that I have been cooking since I was a
teenager. I learned this recipe from my mum. It’s very easy to make it because
you don’t need a lot of ingredients and you only have to follow a few steps to
make this dish.
I use a packet of Maggi noodles to make this dish. First, you have to put the
noodle cake into a microwave safe bowl and add one and a half cups of boiling
water to it. Then you have to place the noodle bowl in a microwave oven and
heat it on high for 2 minutes.

Next, you have to sautee (සෝටේ) some onions in a pan. I’m used to eating spicy
food so I add a lot of chili flakes and pepper to the sautéed onions. But
whenever I make this dish for my son, I don’t add any chili flakes or pepper. I
also add some sweet chili sauce because I like the sweet and sour flavour
combination of sweet chili sauce.
Finally, you have to add the noodles to the sautéed onions. Before you do so,
make sure you turn the stove off so that you don’t overcook the noodles. You
can add a bit of grated cheese on top, to give the noodles a cheesy taste. Though
this is a simple dish, it tastes divine!
Fruit Salad
I’m a very busy person. So, I hardly have any time to cook. I have a sweet tooth
but I’m also keen on healthy eating. Whenever I have some free time, I make a
special fruit salad. I made this recipe on my own without referring to any cook
books. It’s very easy to make this fruit salad because you don’t have to do any
cooking. All you have to do is chop up fruit of your choice and mix it together
in a bowl.

First you have to get some fruit of your choice. I normally go for bananas,
pineapples, peaches, strawberries and pears which you can get all year round.
Sometimes I add seasonal fruits like mangoosteen to this fruit salad. I chop all
of the fruits up and mix them together in a large bowl. Then I add a handful of
raisins, chocolate chips and roasted cashew nuts. Finally, I drizzle some
condensed milk on top. I usually leave the fruit salad in the refrigerator for
about 2 hours before serving it because it tastes better when it is chilled
(cooled).
Coconut Roti
A dish that I know how to make is Coconut roti, which is a popular Sri Lankan
food item that you can have for both breakfast and dinner. Coconut roti is one of
my favourite types of food. My mother taught me how to make it when I was little.
It’s a very simple dish to make as you only need three main ingredients. The main
ingredients that you need are scraped coconut, water and flour. First, you have to
add a cup of scraped coconut to three cups of all-purpose flour in a bowl. You can

add a bit of salt to taste as well as a tablespoon of coconut oil. Then you have to
mix all of these ingredients well with your hand.
Next you have to add one cup of water, a little at a time to the flour mixture, until a
dough is formed. The dough should not be sticky. If you want to add extra flavour
to your roti, then add a bit of chopped onion and green chili to the dough. If you
are not a huge fan of chili, you can add some herbs like parsley and coriander
leaves to make your coconut roti even more flavourful.Then you have to shape the
dough into small balls using your hands. After that, you have to flatten each dough
ball with your hands to make it look like a thick disc.
Finally, you have to heat a heavy-duty skillet or a cast iron skillet on medium high-
heat and place the roti on it. When one side is cooked, flip the roti over to cook the
other side. Once the roti is cooked, it will turn brown. You can enjoy coconut roti
with any spread of your choice like butter, jam or Nutella. Or you can have it with
some chicken or lentil/dhal curry. Lentils
You can also eat it with lunu miris which is a popular Sri Lankan dip that is made
with chili powder, lime juice and red onions. All you need to do is to add about 2
tablespoons of chili powder and one chopped onion into a mortar and pound it with
a pestle. You can season this mixture with a pinch of salt. Finally, you have to add
2 teaspoons of lime juice and keep pounding the mixture well so that all of the
flavours blend in well. Lunu miris is a good accompaniment for coconut roti.

I’m not very good at cooking. So, I usually make a lot of no-bake desserts like
jelly. I’d like to talk about my favourite jelly recipe which I learned from the
internet. It is very easy to make because there is no cooking involved. The only
ingredients you need are water, fruit of your choice, and a packet of jelly crystals –
I usually opt for strawberry jelly but you can go for any flavour of your choice.
All you have to do is to empty the packet of jelly crystals into a bowl. Then add
one cup of boiling water to it. Next you have to stir the jelly mixture well so that
all of the jelly crystals are dissolved in the water. Then leave the mixture aside to
cool.
Once it’s cooled, add fruit of your choice to it. I normally add some chopped
pineapples, strawberries and peaches to my jelly mixture. After that, place the jelly
mixture in the refrigerator for about 3-4 hours. For best results, you should leave it
overnight. Once the jelly is set, you just have to cut it into squares and garnish each
jelly square with whipped cream. My son loves chocolate so I normally sprinkle
some chocolate flakes on top of his jelly squares.

Vegetable Salad
To be honest, I don’t know how to cook – my wife usually does the cooking. But
from time to time I like to help her out in the kitchen. So, I make a vegetable salad
which is the only type of food that I know how to make. It is very easy to make
vegetable salad because all you have to do is chop up the veggies and add a salad
dressing of your choice. I’d like to tell you about a vegetable salad recipe that I
found in a recipe book.
For this salad, you need green and red bell pepper, onions, tomatoes, salad greens
and a cucumber. First you have to dice the onion and the cucumber. Then you have
to cut the tomato and bell peppers into Julienne (ජුලිඑන්) strips. Next you have
to add all the vegetables and the salad greens into a salad bowl and mix them well
with a spoon. Then you have to add some salad dressing to make it flavourful. I
love the sweet and sour flavour combination that you get in lemon vinaigrette
(විනග්රේට්)which is a popular salad dressing.

Let me tell you about the recipe for Lemon Vinaigrette. First you need to
squeeze /skweez/ one large lemon until you have one quarter of a cup of lemon
juice. Then you have to add one teaspoon of honey or maple syrup to the lemon
juice. Then you must add half a teaspoon of Dijon mustard and a pinch of salt. You
can add a quarter of a teaspoon of black pepper to this dressing but since my son
does not eat hot food, I don’t add any pepper to this salad dressing. Finally, you
have to add a quarter of a cup of olive oil to this mixture. Then you have to whisk
it well.
Finally, you have to drizzle the salad dressing over your salad. I normally like to
have this salad cold. So, I leave it in the refrigerator for about an hour before
enjoying it with some potato casserole (කැසරෝල්) which is my wife’s specialty
dish.
