Module 4: REGION 1-ILOCOS

Overview

This module will give you information covering the main points of Region 1
Cuisine. Food culture, traditional methods of cooking, preparation and taste variation will
be highlighted.

Learning Outcomes

At the end of this module you should be able to:


1. Explain the food culture and history of the Region 1 Cuisine;
2. Identify and prepare delicacies of Region 1;
3. Determine the food that are available and explained why those particular foods
are prevalent; and
4. Describe how each cuisine are being processed and prepared.

Let Us Explore

REGION 1
The Spanish arrived in the 16th century and established Christian missions and
governmental institutions to control the native population and convert them to Catholicism. The
region was called by the Spaniards “Ylocos” which means from the “Lowlands”. Before the
formation of the Cordillera Administrative Region, Region 1 also included the provinces of Abra,
Mountain Province and Benguet before Region 1 was modified by Ferdinand Marcos, Pangasinan
was not part of the region.
Came into existence on September 24,1972 when provinces of the Philippines were
organized into 11 regions by Presidential Decree No. 1 of the Integrated Plan of President

Ferdinand Marcos. Inhabitants are called Ilocanos. Inhabitants called their place “Samtoy” from
“sao mi toy” which means “our language here.”
Region 1 is located in the northwest of Luzon. In its eastern borders are regions of
Cordillera Administrative Region and Cagayan Valley and in the south is Central Luzon. To the
west north is the West Philippine Sea.

The Region is composed of four provinces:


• Ilocos Norte
• Ilocos Sur
• La Union
• Pangasinan

ILOCOS NORTE

• Capital: Laoag City


• Founded 1818
• Ilocos Norte has a total land area of 3,400 square kilometers.
• Has 557 barangays comprising its 21 municipalities and 2 cities.
• Noted for being the birthplace of former President Ferdinand E. Marcos.
• Also known as a Northern Tourist Destination
ECONOMY
The province specializes in the following products and industries.
✓ Agriculture- rice, corn, garlic, legumes, root crops, tobacco and other fruits and vegetables
✓ Fishery- tilapia and assorted fishes

Megawatt wind farm in Ilocos

✓ Manufacturing and food processing-salt, empanada, bagoong, patis, basi (native Ilocano
wine), vinegar, longganisa, chicharon, bagnet, chichacorn (cornick), jewelry, garments,
cereal processing, packaging, mechanized processing equipment
✓ Tourism
✓ Pottery

ILOCOS SUR
• Capital: Vigan City
• Founded :1572
• The land area of the province is 149,770 hectares (370,100
acres)
• Ilocos Sur has 768 barangays comprising its 32
municipalities and 2 cities.
• Known as a Heartland of ilocos.

Economy
✓ The people are engaged in farming, producing food crops,
mostly rice, corn, vegetable, root crops and fruits.
✓ Non-food crops include tobacco, cotton and tiger grass.
✓ Cottage industries include loam weaving, furniture making,
jewelry making, ceramics, blacksmithing, and food processing

LA UNION
⚫ Capital: San Fernando City
⚫ Founded 1850
⚫ The land area of the province is 149,770 hectares
⚫ La Union has a total of 576 barangays comprising its 19 municipalities and 1 city.
⚫ La Union, “The Union” in Spanish, was formed in 1850 when the spanish colonial government of
Governor-General Antonio Maria Blanco merged the three southern towns of Ilocos Sur province,
the nine northern towns of Pangasinan and the western towns of Benguet to the East (Eastern Pais
del Igorotes in the Cordilleras). Pangasinenses were the majority in the new province because most
towns had been in the Province of Pangasinan.
⚫ On October 29, 1849, Governor General Claveria issued a “promovido” to fuse the Pangasinan-Ilocos-
Cordillera areas into “La Union”
⚫ Surfing Capital of the North

ECONOMY
✓ La Union is known for its soft broom industry.
✓ The economy is diversified with service, manufacturing and agricultural industries spread
throughout the province.
✓ The main livelihood of the people are: hand woven blankets (Inabel), soft brooms, baskets, pottery,
rice wine (tapuey), sugarcane wine (basi), sugarcane vinegar, wood craft, bamboo craft , native rice
cakes, antique finish furniture, dried fish, honey and mushroom.

PANGASINAN
⚫ Capital: Lingayen
⚫ Founded: 1580
⚫ The province has a land area of 5,451.01 square kilometers (2,104.65 sq mi)
⚫ Pangasinan has 1,364 barangays comprising its 44 municipalities and 4 cities.
⚫ The name Pangasinan means “ place for salt” or “place of salt making”;
⚫ It is derived from the prefix pang, means “for”, the root word asin, meaning salt, and suffix an,
signifying “location”.
⚫ The province is a major producer of salt in the Philippines

ECONOMY
✓ Energy
The 1200 megawatt Sual Coal Fired Power Plant, 345 megawatt San Roque Multi purpose Dam
and the Northern Cement Corporation are all located in Pangasinan.
✓ Marine
Pangasinan is a major fish supplier in Luzon, and a major producer of salt in the Philippines. It
has a extensive fishponds mostly for raising bangus or “milkfish”, along the coasts of the Lingayen Gulf
and the South China Sea. Pangasinan’s aquaculture includes oyster and sea urchin farms.
✓ Agriculture
The major crops in Pangasinan are rice, mangoes, corn and sugar cane. Pangasinan has a land area of
536,819 hectares and 44 percent of the total land area of Pangasinan is devoted to agricultural
production.

Let Us Wrap Up

• Cordillera- a name given by the Spanish Conquistadors when they first


saw the mountain ranges. Meaning “knotted rope”, the Spanish term
refers to the jumbled rolls and dips of this long-range traversing the
northern part of Luzon Island.
• Cordillera Central is a massive mountain range situated in the northern
central part of the Island of Luzon, in the Philippines.
• Is a region in the Philippines composed of the provinces of Abra, Apayao,
Benguet, Ifugao, Kalinga and Mountain Province, as well as Baguio City.
