Directions
Mix oil with a glass of water and sugar.Bring it to boil.Poor in flour and continue mixing untill it
thickens up well.Remove from heat allow mixture to cool down.Add eggs and mix well until
smooth.heat oil in a pan until hot,Pour the mixture through a funnel Into the pan creating
flattened ball about 3cm in diameter and fry on both sides.
Mix sugar, rosewater and a glass of water,heat until water comes to boil and the syrup
thickens.Remove from heat and soak in BAAMIEH for 5 minutes then serve.
JELABI(ZOOLBIA)
500g starch
150g yoghurt(non-stick)
200g sugar
3tbsn rosewater
Oil for frying(2cups)
Butter
1c flour,½tspn Baking soda,1c yoghurt,orange food colour.(mix and put in the funnel to fry in
pan)
COCONUT HALWA
2c grated coconut
½c sugar
1 or 2 tsp ghee
¼tsp cardamom
½rice (uncooked)
Directions
Soak rice 2 to 3 hours until it becomes soft,then grind soaked rice and coconut into a very fine
paste,add water and don't make it watery,after finishing keep aside.
Boil water and sugar,add some enough water to emerse the sugar.Boil until it thickens.Add
paste and continue stirring until it becomes thick and sticky on the sides of the pan.Before
offing the flame add ghee and serve while cooled.
HALWA
Cornflour ½c
Sugar 1½c
Water 2½c
Ghee/Butter 2-3 tbspn
A pinch of food colour (red or Orange)
Cardamom powder ¼tspn/nutmeg
Chopped nuts 2-3tbspn
Instructions
Mix cornflour,food colour,1½cwater and keep aside.fry nuts until Golden brown and keep
aside.Boil 1c of water,sugar keep stirring until it dissolves completely.Once it starts boiling add
cornflour and keep stirring untill thick jelly like.Add cardamom and nuts.Allow it to cool 1½
hours.Cut in to slices then serve.
HALWA OR FUDGE
3½ cup milk,1c heavy whipping cream,1½ sticks butter(1 stick salted-margarine ½ unsalted-
vegetable fat),1 c sugar,1c chopped or sliced almonds.
Directions
Mix all ingredients and put in sufuria.Heat it up.Remove from sufuria stir and put on heat again
until light brown.
FUDGE LIKE
1c sugar,397g condensed milk,1c milk,125g unsalted butter.
JELLY
2tbspn sugar,600ml fruit juice(any),1handful fruit(optional),400 gelatine leaves.
STRAWBERRY JELLY
-1c sugar,600ml water,500gm fresh strawberries,11g powdered gelatine
LEMON CURD
4 lemons(zest and juice),200g sugar,100g butter,3 eggs plus one egg yolk
Preparations
Put lemon zest, juice,sugar and butter,Heat into a proof bowl,sit the bowl over a pan of gently
simmering water.Make sure the bowl is not touching the surface of the pan,stir untill butter has
melted, lightly whisk the eggs and egg yolk and stir in the mixture.Cook for 10-13 minutes while
stirring.Remove from heat and cool it down.
PEANUT BUTTER
2c (300g) peanuts,¼-¾ tspn salt,1-2 tspn honey,2tspn peanut oil or vegetable oil as needed.
For chocolate peanut butter add ½c cocoa powder (46g) and 1½c (173g) powdered sugar
instead of honey.
FUDGE
3c chocolate,1 can (14oz) sweetened condensed milk,½ tspn vanilla,1 tbspn butter,⅛ tspn salt.
Preparations
Combine chocolate and milk.Heat until melted.Remove from heat and add the rest.Stir until the
mixture is smooth.Pour the fudge into the dish.Refrigerate until firm.Cut into square's.
Preparations
Mix condensed milk, vanilla,3 cups sugar and boil.In another sauce pan,place 3 tbsp sugar and
cook until light brown.Combine both mixtures and continue cooking.Add nuts and Butter.Put in
9×9 inch square pan.Cool and cut into square's.
MABUYU-ingredients
2 cups sugar,2 cups water,½c mabuyu flour,4 cups mabuyu seeds,¼ tspn chilly powder
(optional),¼ tspn salt,¼ tspn ground cardamom (optional),food colour (red or any colour).
Method
Mix water,sugar,salt,chilli powder,food colour, cardamom then cook.After bubbling keep stirring
and continue mixing until the syrup starts to bubble down.If the syrup starts to be thick and
sticky but not too sticky add the mabuyu seeds and mix well.
Continue cooking then add the mabuyu flour and mix very well.When the syrup starts
crystallizing and starts coating on the mabuyu seeds.Remove the coated mabuyu and place
them on a big plate(Sinia).Let the mabuyu cool completely.The mabuyu is ready to be eaten.
PIZZA
1 package (¼ ounce) dry yeast,1 tspn sugar,1¼ cups warm water,¼ c oil,1 tspn salt,3½ wheat
flour,½pound beef,1 onion chopped,1 can(15 ounces) tomatoe sauce,3 tspn dried oregano,1
tspn dried basil,1 medium green pepper (diced),2 cup cheese.
Directions
Dissolve yeast and sugar in water.After 15 minutes add oil and stir in flour until a soft dough
forms.Knead until smooth.Place in a greased bowl.Cover and let it ride until doubled in size.
(about 45min).
Cook beef and onion until no longer Pink,drain,punch down dough,Divide in half,press each into
a greased 2inch pizza pan.Combine tomato sauce,aregano and basil.Spread over each
crust,top with beef mixture, green pepper and cheese.
Bake for 400° For 25 to 30 minutes or until crust is lightly browned.
Yield:2pizzas (3 servings).
VANILLA FUDGE
300ml milk,350g sugar,100g butter,1 tspn vanilla.
Directions
Mix 300ml milk,sugar and butter until sugar has desolved and butter melted(boiling time 15-20
minutes). Remove from heat,add vanilla,let it cool down for 5 minutes.Beat the mixture with a
spoon or mixing tool (any) until it starts to thicken.Pour in prepared greased tin and leave it to
cool.Cut into small squares.
FUDGE
3 cups chocolate,1 can (14 ounce) sweetened condensed milk,¼ cup butter,1 cup chopped
walnuts (optional).
Instructions
Melt peanut butter and butter together, remove from heat if smooth and add the remaining
recipes.Stir until it's thick and fold them into the fudge while it's still warm.
LOLLYPOP SWEETS
1c sugar,2tspn glucose,¼ cup water,1-2 drops essence flavour,1-2 drops food colour.
Directions
Combine sugar, glucose,water,food colour and flavour then boil.
Drop a spoonful of the mixture into a glass of cold water and let it cool for 30 seconds,if you
crack it with your teeth,then it's ready.
Preparations
Preheat oven 350°.Combine egg,water, bread crumbs,onion,salt and pepper.Add ground beef
broken into chunks and mush with your hand to combine.Form into meatballs or rolls.Place on
a broiler pan.Cook for 20-30 minutes until no longer pink in center.Cool and freeze.
Instructions
Pour in a pan water, food colour and sugar on medium heat.stir until the syrup thickens up and
looks sticky.Add the remaining recipes.
BUNS
4½ cups flour,4½ tspn dry yeast,1c milk,¾c water,½ cup margarine (Butter or oil),⅓-½c sugar,½
tspn salt.
Instructions
Shape dough in 12-15 small balls and place on greased baking sheet to rise until doubled in
size(approx 45 mins). Bake in preheated 400° degree oven 12-15 minutes.
PANCAKE
110g plain flour,Pinch of salt,2 eggs,200ml milk mixed with 75ml water,50g butter melted.
ROLLS KANGUMU
2¼ Dry yeast,1c warm water,¼c dry potato flakes (crips),2 tbsp sugar,1 tspn salt,1 egg,2 tbspn
oil,¾ onion powder,2¼c wheat flour.
NB:leave to rise for 20-30.
QUEEN CAKE
100g unsalted butter,100g sugar,2 eggs,100g flour,1 tspn vanilla extract,¼ tspn salt,1 tbspn

MAHAMRI
1 tspn illiki,1 tspn yeast,3 cups wheat flour,4 tbsn sugar,½ cup fresh milk or coconut milk,3
eggs,1c warm water,pinch of salt,3 tspn baking powder,oil for frying.
KAIMATI
½ kg wheat flour,½ tsp baking powder,1 tspn illiki,1 tbspn Sugar,1 tspn yeast,1 egg,½ milk.
Coating
Boil 3 tbsp sugar mixed with 5 tbsp water.
BUTTERMILK
Mix ¾ cup milk with 1 tbspn lemon.Allow the mixture to rest for 5-10 minutes.When the mixture
is curdled the Butter milk is ready.

tspn yeast or 1 tspn baking powder,½c water,½ tspn salt or more.Oil for frying.
NB: Add water(tspn at a time until it becomes like a heavy cake mixture)
NB:mix well until creamy and smooth.Then put in the oven until Golden brown.
GINGER COOKIES
¾C butter,½c brown sugar,½c white sugar,¼c molasses,1 egg,1 tspn vanilla,2 cups flour,½ tspn
baking soda,½ tspn salt,1½ tspn ground cinnamon,1½ tspn ground ginger,½ tspn ground
cloves.
SWEET BREAD
1c milk,⅓c sugar,⅓c butter,1 tbsp dry yeast,4 cups flour,½ tspn salt,2 eggs,2 tbspn oil.
BREAD
4½ cups flour,4½ tspn baking powder,1 salt,2¼ cups sugar,1c dried mixed fruit,1c raisins,3 cups
grated coconut,¼ tspn cinnamon,¼ tspn grated nutmeg,½c milk,2 tspn vanilla,½ Butter (1b).

1 tbspn yeast,1 tspn sugar,½ tspn salt,1c warm milk,2 tbspn Butter or margarine (melted),3
cups flour.
Method
Make your dough,put it in a greased bowl and leave it to rise.After 40-45 minutes renead again
to it's original size and reput it in the bowl for 40-45 minutes,then put it in oven for 20-25
minutes or until bread sounds hollow when tapped.When it starts Browning on top cover with
some oil.
Remove from oven and put on wired tray to cool.
COOKIES
2 cups brown sugar,1c white sugar,2 cups Butter (softened),4 eggs,2 tbspn vanilla extract,1
tspn baking powder,½ tspn,4¾ cups wheat flour,1c ground pecans,4 cups semisweetened
chocolate chips.
SUGAR COOKIES
1c butter,1c sugar,1 egg 1 tspn vanilla,2¾ cups flour,2 tspn baking powder.

APPAM(Indian breakfast)
2 cups rise(soak for 2h), Handful coconut, handful rice,1 tspn yeast,3 tspn,salt as needed.
Method
Mix coconut and rice, grind until smooth.Add soaked rice,yeast and sugar.Let it ferment.
PAROTTA(Indian breakfast)
2 cups flour,½tspn salt,1 tbspn sugar,½c warm water,½c oil,1 egg.
Method
Mix flour,salt and sugar.Add warm water,oil and egg.Knead well,cover and leave it to rest for
1h.Make the balls and shape them into spiral then cook after 10 minutes.
BHAJIA
3 large potatoes,1½c (200) gram flour,1 tspn chilli powder,salt to taste,1 tspn turmeric powder,
handful of dhania,3 cloves garlic,3 green chillies,1 ginger root.
Method
Slice the potatoes and cook in salty water.Crush ginger, garlic and green chillies into a paste
and add to the gram flour along with the rest of ingredients.Add water and stir untill it's well
mixed.Put the sliced potatoes in the gram flour and make sure they are well coated.Cook the
bhajias until Golden brown and crispy on all sides.Serve immediately while still hot and enjoy.
VIAZI KARAI
6-8 potatoes boiled,1c wheat flour,¾c gram flour,1c water,1 tspn safron,termeric or yellow food
colour, salt to taste,oil for deep frying.
BHAJIA
18 potatoes (sliced and boiled),2 cups gram flour,1c water,A bunch of dhania,2 onions
chopped,1 tspn salt, Pinch of yellow food colour, pepper (optional),oil for frying.
INDIAN BHAJIAS
4 medium onions sliced(approximately 3 cups),1½c cheakpea flour,¼ cup chopped cilantro,½
tbspn chopped green chillies,1 tspn corriander powder (optional),¼c garam masala(optional),⅓
tbspn water, salt to taste.
KACHUMBARI
4 medium tomatoes,2 onions,½c lemon juice,1c chopped dhania,3 grated carrots.
UGALI
1c milk,1¼ cup cornflour,1c water.
SUKUMA WIKI(KALES)
2 tbspn oil,1 onion chopped,3 tomatoes,1 bunch SUKUMA WIKI chopped,½c water, salt to
taste,chilli(optional),meat(optional)
CABBAGE
1c water,1 small cabbage,½c oil,2 onions chopped,3 large tomatoes,salt to taste,3
eggs(optional),2 red chillies 0 (optional)
TEA
2 cups water,3-4 cloves,1 cinnamon stick crushed,2-3 cardamom pods crushed,1c milk,2 tbsp
tea leaves.
-You can also add peppercorns, funnel seeds and ginger fresh.
SCRAMBLED EGGS
4 eggs,¼ cup milk,2 tspn Butter,salt and pepper as desired.
Preparations
Mix and blend.Heat butter in your pan over medium heat.Pour in the mixture.As eggs begins to
set gently pool the eggs across the pan with a spatula forming large soft curds.Continue
cooking, pulling, lifting and folding eggs until thickened and their is no visible liquid egg
remains.Do not stir constantly remove from heat and serve immediately
Method
Heat and grease a griddle or large Skillet.Pour in ¼c of the mixture and cook until it's Golden
brown 3-4 minutes per side.Serve topped up with a sprinkle of the reserved beef,onion and
good dose of warm syrup.
CAKE ROLLS(BUNS/SCORNS)
120 ml water,4 tspn milk powder,1 tspn yeast,3 tbspn sugar,¾ tspn salt,1 egg,2 cups flour,3
tbspn butter(42g),1 egg for brushing later.
Directions
Mix everything except Butter.Knead well.Then add butter.Continue kneading until the dough is
stretchy Put the dough in a greased bowl and cover until doubled in size.Roll,cut into pieces
and fold(like scorns,buns,rolls).Put in a baking tray and wait until doubled in size.Brush with
egg and put in an oven.
CROISSANT1
400g flour,260ml milk,180-200gms Butter,4 tbspn (60g) sugar,¼ tspn salt,1 tspn yeast,1 egg
and 1 tspn milk for brushing.
CROISSANT2
600g flour,1½ tbspn yeast,6 tbspn sugar,390ml warm milk,250g softened butter,1 egg yolk.
CROISSANT3
-1c warm milk,¼c sugar,3 tspn yeast,2⅓c flour,1 tspn salt,2 tbsp oil,2 tbspn milk powder
(optional)
-For filling ¼c cream,cheese, strawberry sauce or chocolate,2 tbspn icing sugar,lemon zest.
DOUGHNUTS OR DONUTS
1c warm milk,6 tbspn sugar, pinch of salt,3 tspn yeast, pinch of cinnamon powder,6 tbspn
Butter,2 eggs,4 cups flour.
Directions
Grease a bowl,place the dough inside,cover until doubled in size.
Roll and cut using a cup and use bottle top to cut the center of it.serve with icing sugar and
sprinkle some coloured vermicell.
MOOFA
2c flour,¼c maize flour,¾c coconut milk(or real milk),¾ c water,1 tspn garlic,1 tbspn sugar,1
tbspn yeast,1 tspn baking powder (optional),salt to taste.
Method
Mix everything and leave in a bowl to rest for 1h.Grease and heat the pan then cook both sides.
MY PILAU
2 onions chopped,2 garlic cloves,8 cardamom pods,4-6 cinnamon sticks,1 tspn cumin
seeds(powdered) 1 tspn curry powder or vegetable seasoning,1kg basmati rice(soak for 30
minutes),1kg meat(boiled-use soup to cook pilau,5 tomatoes blended (or puree tomatoes),
tomatoe paste,bay leaves.
VISHETI AU KASHATA
4 cups wheat flour,2 tbspn butter or margarine,4 tbspn milk powder,1 tspn baking powder,2
cups milk,2 tbspn sugar,salt to taste
Coating
-Boil 2 cups water,2 cups sugar,1 tspn illiki, vanilla (optional) and add VISHETI.

2½ cups flour,2¼ tspn yeast,1 tspn salt,1 tbspn sugar,1 c warm water,2 tbspn vegetable oil,1
stick butter softened.

PILAU
1kg meat,4 garlic cloves,9 cardamom pods,4 tspn oil,1 onion chopped,3 cups rice,10 whole
pepper corns,8 whole cloves,8 cinnamon sticks,1 tspn ginger,¼ cumin seeds powder,4
tomatoes,6 cups water,salt to taste.
KACHUMBARI SALAD
4 tomatoes sliced,2 onions chopped, washed with salted water and drained,½c lemon juice,1c
dhania chopped,3 grated carrots,4 peppers.

LEMON JUICE
1c sugar,1c water,1c lemon juice,4 cups cold water to dilute.
MANGO JUICE
2 mangoes,2 tbspn sugar,1c water and ice cubes

APPLE JUICE
3 apples,5 cups water,¼c sugar.

PAWPAW JUICE
3 cups pawpaw,1c sugar,1 tbspn lemon juice,4 cups water.
AVOCADO JUICE
1 ripe avocado,500ml cold milk,150ml cold water,150g (¾c) sugar,Vanilla essence (optional).
AVOCADO
1 avocado,1 banana,½c yogurt,1½ cups orange juice,¼c honey or sugar,3 cups ice.
BIRYANI
1kg basmati rice,1kg potatoes,1kg meat,250ml plain yogurt,1 unripe pawpaw,2 limes,¼kg
tomatoes,2 garlic cloves,1 tbspn ginger(crushed),4 cardamom pods,4 cloves,2 small
cinnamon,100g tomato paste,1 tbspn pilau masala,200ml oil,2 pinch if yellow food colour,a
pinch of sugar.
PAWPAW MILKSHAKE
500g PAWPAW,8 tbspn sugar,500ml milk(2 cups)1c icecubes(optional).
MANGO MILKSHAKE
2 mangoes,500ml milk,7 tbspn sugar,1 glass icecubes.
AVOCADO MILKSHAKE
1 avocado,5 icecubes,3 tbspn sugar,1⅓ cups milk,1 tspn lime juice,1 scoop vanilla ice cream.
CHOCOLATE MILKSHAKE
2 tspn chocolate powder(or chocolate syrup),2 tbspn vanilla ice cream,½ pint whole milk
(500ml).
GOLDEN SYRUP
1c lemon,1c sugar,¼c water.
-boil water and sugar then after dissolving add lemon juice.
MSHIKAKI
1 tspn ginger peeled and grated,2 cloves minced,1 tomato peeled and crushed (or 1 tbspn tomato
paste),½ tspn curry powder,2 tbspn oil,2 tspn water, black pepper,salt to taste,1kg meat (boneless)
cut into small pieces.
BREAD SALAD
3 potatoes,1 carrot(sliced),1 egg (boiled),1 onion,1 cucumber,salt and pepper,¾c spinach
(optional), handful of dhania (optional).
MANGO JAM
3 ripe mangoes,¼c sugar,½c lemon juice.
Directions
In a soucepan add mango,lemon juice.Cook over low heat until the mango has thickened.After
seeing bubbles coming out stir.
CHAPATI
1c flour,¾ chopped onions,¼ cumin seeds,2 green chillies chopped,½ tspn garam masala,1 tspn
coriander powder,1 tbspn coriander leaves, salt to taste.
PANCAKE
1c flour,¾c rice flour,¼c sour milk,1 green chilli chopped,½ cumin seeds and bastard seeds,10
curry leaves torn into pieces,3 cups water,½ tspn salt,2 tbspn sugar (optional).
PUMPKIN PANCAKE
2 cups flour,3 tbspn sugar,3 tbspn baking powder,½ tspn salt,2 cup pumpkin puree(blended),½
tspn ginger and cinnamon,1 egg,1½ c milk,3 tbspn oil,2 tspn lemon juice,2 tspn lemon
zest(grated).
Preparations
Prepare 3 bowls for flour,egg and oatmeal,dust the bananas in flour,dip them in the egg to
coat.Roll the bananas in the oatmeal until they are well covered with oats.Fry the bananas until
they are golden brown.Then transfer to the Paper towel to drain.Drizzle with honey, serve with a
scoop of ice cream.
Preparations
Combine ¼ cup warm water with honey and mix well.Fry the bananas.Pour the honey mixture
on top.Sprinkle with cinnamon and serve.
GREEN BANANAS
4 green bananas(boil for 20 minutes),1 tspn cumin seeds,½ onion chopped, chillies,½ tspn
turmeric powder,1 tbspn oil,1c water (a little extra if the bananas take longer to cook).
Preparations
Boil for 20 minutes,peel and slice.Toast cumin seed in pan,add oil and onions and cook untill
slightly brown.Add chilli turmeric.Braise for 5 minutes on low heat.Add the chopped bananas
and a cup of water.Cook untill the bananas are soft.Serve warm with rice or roti.
BANANA BREAD
½c oil,1c sugar,1 tspn vanilla extract,1½ cups flour,1 tspn baking powder,½ tspn salt,½c sour
cream,½c chopped walnuts,2 medium bananas,2 eggs.
Directions
Mix butter(melted),sugar,eggs and Vanilla well.Combine the flour, baking powder and salt,stir
into the butter until smooth.Finally fold in the sour cream, walnuts and bananas.Spread evenly
into prepared pan,Cook for 60 minutes until a toothpick inserted into the center of the loaf
comes out clean.Cool loaf in the pan for 10 minutes before removing.
WAFFLE
2 cups flour,½ tspn salt,2 tbspn sugar,2 tspn baking powder,1½c milk(you can probably add a
little more than this),2 eggs,4 tbspn butter,1 tspn vanilla extract.
Instructions
Combine dry ingredients.Mix milk add eggs together,stir in butter and vanilla.Stir the wet into
the dry ingredients.If the mixture seems to thick,add a little milk.Cook in the waffle,iron as you
normaly cook waffles.Enjoy
HOT DOG
Combine 1c yellow cornmeal,1c flour,¼ tspn salt,⅛ black pepper,¼c sugar and 4 tspn baking
powder.
Add 1 egg and 1c milk.
16 ounces beef(2 cups).
16 wooden skewers.
1 quart(1L) oil for frying.
Instructions
Insert the skewers into beef, roll in the butter untill well coated,cook untill brown.
SCRAMBLED EGGS
6 eggs,1 tspn ghee or butter,1 tspn olive oil,1 onion sliced,1 tbspn ginger,¾ tspn turmeric,½ tspn
garam masala,½ tspn chilli,1 tspn salt,2 green chillies sliced,1 tbspn chopped cilantro.
Instructions
Fry onions,garlic and ginger.Add turmeric, garam masala,chilli and salt.Lastly pour eggs on top.
Toss in the chilli powder and garnish with the chopped cilantro leaves.
Serve hot with ROTTI,bread or chapatis.
FRIED BANANAS
2 bananas,1 egg,150g flour,2 tbspn sugar,pinch of salt,pinch of baking powder,oil for frying.
