A synonym of all things joyous,


beautiful, appetizing and mouth-
watering.
DESSERT
Is usually sweet course or dish (as of
pastry or ice cream) usually served
at the end of a meal.
is a confectionary course that
concludes a main meal. It is usually
consists of sweet foods, and
possibly a beverage such as dessert
wine or liqueur, but may include
coffee, cheeses, nuts or other
savory items.
DESSERT
The term can be applied to
many confections such as cakes,
tarts, cookies, biscuits, gelatins,
pastries, ice creams pies,
puddings, custards and sweet
soups.
Fruits are also found in dessert
courses because of its natural
sweetness.

The word originated from French
word desservir, meaning “to clear the
table”.
First known use in 1600, in an
educational health manual entitled
Natural and Artificial Directions for
Health written by William Vaughan.

Michael Krondl cited and traced the
origin of dessert in his book entitled
“Sweet Invention: A History of Dessert”.
Western cultures use the term dessert
for the last course of a meal, Eastern
cultures refer to it as “sweets, afters or
informally, and as pudding”.

Sweets were fed to
the Gods in Ancient
Mesopotamia and
India. Dried fruits
and honey were
probably the first
sweeteners used in
the most of the
world.
Sugar
The spread of sugar paved way
and is essential to the development
of dessert all over the world.
India
The extraction and refining of cane
sugar into its crystallized form was
established at around 300 A. D.
Europe
Merchants from Middle East spread the
use of sugar in Europe in Middle Ages.
Sugar was considered as a spice and a
medicament.
In 14th century, the cost of 1 lb. of sugar
is equivalent to the cost of two pigs.
Sugar became a status symbol during
Middle ages.
France
With the reign of Louie XIV, sugar
and spice were removed from main
part of the menu.
Savory dishes became distinct from
sweet ones.
Dessert as a special course came
into being.
Greece and Persia
Herodotus
mentioned that
opposite to the
Greeks that has a
bounty meal, the
main Persian meal is simple, but they
eat many desserts afterwards.
America
The Industrial Revolution caused
desserts to be mass-produced,
processed, preserved, canned, and
packaged.
Frozen foods, including dessert
became very popular starting in the
1920s.

Rich people ate desserts
like preserved fruits, jelly
and wafers.
Italian ate Panettone
since 15th century.
Panettone- is an Italian type of sweet
bread loaf originally from Milan.

Most pudding
were meat-based.
Rice pudding was
known and was
regarded as a medicine until
19th century.
MIDDLE AGES
Marzipan was eaten in England
from Middle Ages. Tudors used
marzipan to make edible
sculptures of animals,
castle, trees, and people
called subtleties.
Marzipan- is a paste made
of almonds and sugar.
According to author Michael Krondl,
in 16th century Italian chefs used eel in
Marzipan whilst a Parisian Chef used
frogs in macaroon batter, however
elegantly served.
There were no differences as such
between savoury and sweet. In fact,
they were often served together.
MIDDLE AGES
Syllabub, another
dessert was invented
in the 16th century.
Syllabub-is an English sweet frothy
drink which was popular form the
16th-19th century, made of milk or
cream, sugar and wine.

Blancmange-
was originally a chicken stew
flavoured with almonds but in
17 century it became a white

Bread and butter pudding also
became a common dish in 17th
century.
In 17th century people in England
first began to eat yogurt.
They also began eating Ice
cream during this time.
Ice cream dates back in the 14th
century. It was invented in China,
discovered by Marco Polo and
expanded as a technique in
Europe by his travels.
MIDDLE AGES
In 18th century people
began eating trifle similar
to the modern dessert.
Trifle- an English cuisine is
a dessert made of fruit,
thin layer of sponge
fingers soaked in sherry or another
fortified wine, and custard. It can be
topped with whipped cream.
Mousse was
Mousse invented during 18th
century.
In 19th century,
puddings took its
modern sweet form.
In 19th century,
puddings like Rolly
Poly, Spotted Dick,
and Peach Melba
were invented.
Roly Poly Pudding
(shirt sleeve pudding,
dead man’s arm or
dead man’s leg) is a
traditional pudding, flat-rolled suet
pudding which is then spread with
jam an rolled up, similar to a Swiss roll
then, steamed or baked.
Spotted Dick
-Is a British pudding,
made with suet and
dried fruit and often
served with custard.
-It is made from a flat
sheet of suet pastry sprinkled with dried
fruit, which is then rolled up into a
circular pudding.
Peach Melba
-Is a dessert of peaches
an raspberry sauce
with vanilla ice cream.
-The dish was invented
in 1892 or 1893 by the French chef
Auguste Escoffier at the Savoy Hotel,
London, to honor the Australian soprano
Nellie Melba.
MIDDLE AGES

1837- Alfred Bird invented the


custard powder.
1843- Nancy Johnson invented a
hand operated ice cream maker.
