What Are The Interrelationships of NUTRITION, FOOD SCIENCE, AND CULINARY?
Although nutrition, food science, and culinary are similar in that they both centers on food, and
these three are important in the foodservice industry. their emphasis on its implications is very
different. Nutrition studies the relationship between foods and their effect on an individual’s
health. Nutrition considers topics such as obesity, malnutrition, food insecurity, and nutritional
deficiencies. In comparison, Food Science considers chemical, biological, and physical
properties of food about the manufacturing, processing, and storage of food products. Also,
food science is a study of how macromolecules like carbohydrates, proteins, fats, water interact
with each other. Food science and nutrition is an overall science of foods, their components,
their nutritional values, how they are good or bad for us, etc. Food nutrition and dietetics
specifically target therapy with diet. It tells us about human physiology, diseases, and what and
how much to eat when the body is sick. While, culinary is an art that combines food science
with cooking skills to create more nutritious and fulfilling meals for individuals and families.
There are 4 types of malnutrition, according to the World Health Organization. This includes
deficiencies, stunting, being underweight, and wasting. Each type of malnutrition stems from a
unique cause. Malnutrition can also refer to the excesses of certain nutrients, which can lead
to obesity and other health conditions. First is deficiencies: Nutritional deficiencies are when
you do not get enough of a specific nutrient. This can occur when the body is not able to absorb
the nutrients from food or if there is not enough food containing a specific nutrient being
consumed. For instance, scurvy is the condition stemming from not having enough vitamin C.
Next is stunting; the term used to describe someone who has a low height for their age. This
can happen after frequent infections or from not having enough nutrition. This is not typically a
problem within nursing home facilities, but rather for children. Next is, Undernutrition or
people who are undernourished lack food calories or nutrition. Typically, people are considered
underweight when their body mass is 15% below what is considered the normal range for a
person’s age and height. This is one of the most common types of malnutrition that can be
found in nursing homes. Last is is wasting: is the term for having too low of weight for their
age. This often occurs because of a lack of access to food or because of disease. This is also not
one of the primary types of malnutrition seen in nursing homes.
4. Define GOOD NUTRITION. How can you achieve this in your daily life.
Good nutrition means your body gets all the nutrients, vitamins, minerals it needs to work its
best. Most people know good nutrition and physical activity can help maintain a healthy weight.
But the benefits of good meals go beyond weight. Good nutrition can help reduce the risk of
some diseases, including heart disease, diabetes, stroke, some cancers, and osteoporosis,
reduce high blood pressure, lower high cholesterol, improve your well-being, improve your
ability to fight off illness, improve your ability to recover from illness or injury and increase your
energy level. An example of having a good nutrition is planning or preparing what you eat every
day and also you have to know how many calories, fats, protein before you intake your foods.
And also you have to modify and find alternate healthy food you will be intake in your everyday
routine. Like for example instead of drinking soda, I will modify it by drinking fresh milk because
I know milk is healthier than soda and milk is high in calcium and protein.
