Assignment of Lecture 2

The document contains 4 problems involving calculations of moisture content, percent solids, amount of water needed to increase moisture content, and percentage ash and coefficient of variation from sample data. The first problem provides gravimetric results to calculate moisture content and percent solids of a sample. The second asks how much water is needed to increase flour moisture content to 68% for breadmaking. The third requires calculating percentage ash on an as-received and dry matter basis. The fourth determines if ash analysis data are acceptable based on a coefficient of variation threshold.

You are on page 1/ 1

Problem 1:

You have the following gravimetric results: weight of dried pan is 1.0376 g, weight of pan and liquid
sample is 4.6274 g, and weight of the pan and dried sample is 1.7321 g. What was the moisture content of
the sample and what is the percent solids?

Problem 2:
A company want to analyze moisture content of wheat flour before using to make bread. A technician use
the rapid moisture analyzer to measure the moisture content of the flour. After analyzing, the machine
showed the data of 11.2%. So how much amounts of water do we need to add to the flour to increase the
moisture content to 68% for breadmaking?

Problem 3:
A grain was found to contain 11.5% moisture. A 5.2146-g sample was placed into a crucible (28.5053 g
tare). The ashed crucible weighed 28.5939 g. Calculate the percentage ash on
(a) an as-received (wet weight) basis
(b) a dry matter basis.

Problem 4:
You wish to have a coefficient of variation (CV) below 5% with your ash analyses. The following ash
data are obtained: 2.15%, 2.12%, 2.07%. Std. deviation = 0.0404. Are these data acceptable, and what is
the CV?
