PERSONAL HYGIENE SOP

PURPOSE: To prevent contamination of product by operator

SCOPE: This procedure applies to operator who handle, prepare main product.

KEY WORDS: Personal Hygiene,

1. Personal Hygiene means practices associated with the preservation of health and healthy living.
Personal hygiene practices include not working with product when sick, washing hands in an approved
manner and at required times, do not smoking while handling machine or product.

INSTRUCTIONS:

1. Train employees on using the procedures in this SOP.


2. Wash and dry your hands thoroughly before handling food, and wash and dry them again frequently
during work
3. Never smoke, chew gum, spit, change a baby’s nappy or eat in a production area or product storage
area
4. Never cough or sneeze over food, or where food is being prepared or stored
5. Wear clean protective clothing bases on PPE matrix.
6. Keep your spare clothes and other personal items (including mobile phones) away from where food is
stored and prepared
7. Tie back or cover long hair
8. Keep fingernails short so they are easy to clean, and don’t wear nail polish because it can chip into
the food
9. Avoid wearing jewellery, or only wear plain-banded rings and sleeper earrings
10. Completely cover all cuts and wounds with a wound strip or bandage (brightly coloured waterproof
bandages are recommended)
11. Wear disposable gloves over the top of the wound strip if you have wounds on your hands
12. Change disposable gloves regularly
13. Advise your supervisor if you feel unwell, and don’t handle food.

MONITORING:

 A designated employee will inspect employees when they report to work to be sure that each employee is
following this SOP.
 The designated employee will monitor that all foodservice employees are adhering to the personal hygiene
policy during all hours of operation.

VERIFICATION AND RECORD KEEPING:


The assistance manager will verify that employees are following this SOP by visually observing that employees
during all hours of operation.
