Vodka
Introduction
Vodka is a neutral spirit that traditionally lacks a distinctive character, aroma, taste or color. It
originated in Russia during the 14th century and its name is derived from Voda, the Russian
word for water. Vodka can be produced from potatoes, grains, corn, wheat or even more
unconventional items such as grapes.
Production:
Distillation, Filtration and Dilution
Distillation-The initial stage of vodka production is very similar to whisky, or beer. The raw
material is processed to extract the sugars. It is then fermented to give an alcoholic wash
which is then ready to be distilled. All vodka is distilled in a column still (although there are
some distillers who will then dilute the resultant spirit and redistill it through a pot still to give
character) to a level of around 96% ABV, almost pure ethyl alcohol.
Filtration – The spirit is then filtered in one of a number of methods. The most common of
these is to use activated charcoal, which strips out any remaining congeners and impurities,
creating a very pure, neutral spirit.
Dilution - The vodka will then be diluted to bottling strength.
Types of Vodka
a) Neutral Vodka
b) Flavoured Vodka
Neutral Vodka - Neutral vodka refers to the drink that is made from traditional
Russian or Polish recipe. Its flavour comes exclusively from the alcohol aroma,
and quantity of alcohol determines in which class the drink is categorized.
Russians separate their natural vodkas into high quality, strong (with over 55%
alcohol by volume) and export-worthy. Polish define their vodka into standard,
premium and deluxe. United States used classic or regular types, and all of their
vodkas are completely devoid of specific aromas. To distinguish themselves,
manufacturers of neutral vodka in US use varying amounts of alcohol content,
brand recognition and price.
Flavoured Vodka - As the techniques for creating vodka became more advanced,
brewers from all around the world started devising the ways to introduce many
new flavours. Some of the best known flavoured vodkas come from Russia and
Poland - Limonnaya Vodka (lemon), Kubanskaya Vodka (lemon and orange),
Pertsovka Vodka (peppercorns and chili peppers), Okhotnichya or Hunter Vodka
(coffee, lemon, ginger, brandy and more). In recent years, fruit flavored vodkas
started receiving much more popularity than before (oranges, apples, berries,
and more).

Cognac
Introduction
Cognac is a type of grape brandy produced in the wine-growing Charente region in South
West France. The region is a recognized AOC spread around the small town of Cognac,
from which it takes its name. Wine from white grapes is double distilled according to a
traditional method, and then aged in oak casks for many years to produce a brandy of gold
coloration and expressive aromas and flavours. Brandy comes from the Dutch word
brandewijn which means burnt wine.
Grape brandy is a mixture of distillates obtained from the fermented juice or mash of grapes.
There are brandies which are made from other fruits as well, such as peach, apricot, and
apple.
