Basic - Cleaning in Place (Cip)

The document discusses cleaning in place (CIP) in the dairy industry. It provides 3 key points: 1) 7 factories audited were found to have CIP problems and not respect the 5 T rule (time, temperature, turbulence, tank design, and tracking). 2) CIP is cleaning production lines in a closed circuit without dismantling equipment, using chemical solutions delivered via a CIP station. It has advantages over manual cleaning. 3) The basic concept of CIP involves removing soil, ensuring safety and quality, and it occurs in CIP stations that store and deliver chemicals and in user areas like pipes and tanks.

Cleaning in
Place
Basic Concept
• What is
Historically,
CIP ? cleaning was done using manual tools such as brushes,
sponges and detergent.
Equipment had to be dismantled, people had to enter tanks to get to the
surfaces. ( COP )
Manual cleaning is still applied in our plants for special applications, such
as filling machines, Egron dry cleaning and outside cleaning of
equipment.

The introduction of high capacity and complex manufacturing processes

has led to the development of CIP (cleaning in place) techniques, now the
standard practice for our manufacturing processes.

4
Cleaning in
Place
What is CIP ?
• CIP is a
For cleaning including steps such as pre-cleaning, rinsing and removal
procedure
of cleaning chemicals.
Consists of cleaning production lines in a closed circuit without
dismantling equipment or pipes

• What is Cleaning?
• Cleaning is the action to
remove Soil
The removal of soil, food residue, dirt, grease or other
objectionable matter from a surface by physico-chemical reaction
without, in any way, attacking the surface.

5
Cleaning in

Basic Concept

• So WHY do we need CIP ?

Why CIP !

Cold Plant
• Removal of Protein soil and Milk Fats
• Reduce microbiological growth

Hot Plant
• Fouling in dairy plants is a serious problem which:

- Lowers the efficiency of heat transfer

- Increases the pressure drop through the plant

- Potentially endangers plant and process sterility

- Limits the operational time of the plant

8
WHY CIP ?
CIPs systems have several advantages over the former manual cleaning.
 More consistent results : Accurate and rapid monitoring, repeatability

 Better plant usage : less downtime, fully automated processes

 Less manual work : No need to dismantle, less human errors

 Greater safety : Protection from heat and chemicals

 Cost savings : Better use of water, chemicals and energy

 Quality : Consistency in term of quality

CIP - key factor which play a vital role in the

manufacturing of consumer products

9
Cleaning in
Place
Basic Concept
WHERE
:
CIP happens in two places :

CIP Station: Where the Chemicals are stored,

prepared and delivered to the user at the
correct concentration, temperature, flow rate
and for the correct time.

Users: Pipes, tanks an all equipment and surfaces

in direct contact with product.
Where soil or fouling deposition takes
place
