WHAT IS APPETIZER?

•APPETIZER – is a food or drink


served usually before meal to
stimulate the appetite.
TECHNICAL TERMS
• CANAPES – a small piece of bread or a cracker that has cheese, meat
fish, and others, on top of it and that is often served at the party.
• BAGUETTE – a long, thin loaf of French bread.
• HORS D’OEUVRES – a food served in small portions before the main
part of a meal.
• GOUJONS – a small strip of fish or chicken, coated in breadcrumbs and
deep-fried.

CLASSIFICATION OF APPETIZERS

• 1. CANAPES – usually small


pieces of bread, toast or crackers,
spread and topped with a highly
seasoned food mixture such as
eggs, chicken liver, ham, bacon,
sausages, and others can perk up
the flavor, taste, and even the color
of the canapes.
CANAPES TOPPINGS
• A. anchovy or sardine canapés
• B. ham canapes
• C. cheese canapés
• D. chicken canapés
• E. prune or fig canapés
• F. fruit canapés
• G. Alexandra canapés
• H apricot canapés
• I. anchovy-and-egg canapés
2. COCKTAILS – this is another
kind of appetizer which may be
in the form of a fruit vegetable
mixed with little alcoholic
beverage or seafood's like
shrimps, crabs, or lobsters served
with a slightly seasoned sauce.
• 3.VEGETABLE HORS
D’OEVRES - these are salty, tart,
or crispy food that use vegetable
slices as base.
• 4. OVER THE COAL APPETIZER
– it is more popular when served
outside and the guests attend the
grilling.
• 5. SOUP – it is also another kind of
appetizer served hot or cold.
• 6. PARTY OR PASTRY BREAD – these are
in different shapes, colors and with different
fillings such as peanut butter, cheese, butter,
jelly, eggs, and jam with mayonnaise or salad
dressing as base.
• 7. CHIPS AND DIPS – these are informal
appetizers made with softened cheese, sour
cream, bean puree, or foods of similar
consistency flavored to compliment crisp,
bite-size foods that are dipped into the
product.
IDENTIFY THE FOLLOWING:
• 1. It will be cut thin slices of bread in rounds with a large biscuit cutter.
• 2. It will be cut thin slices into rounds.
• 3. It is cover pieces of sautéed bread with grated parmesan cheese, sprinkle with
salt and paprika.
• 4. It is usually small pieces of bread, toast or crackers, spread and topped with a

• 5. This is another kind of appetizer which may be in the form of a fruit vegetable
