Introduction to Food and Beverage Service

This module will discuss the following: Introduction to Food and


Beverage Service

After going through this module, you are expected to:


• 1. explain core concept in food and beverage services;
• 2. discuss the relevance of course;
• 3. understand the significance of food and beverage service in
today’s market job demands; and
• 4. recognize food and beverage service opportunities for other
related future careers.
What is Food and Beverage Service (FBS)?

The Food and Beverage Service is related to all activities


pertaining to preparing and serving food and beverage to
guests/customers. The basic function of the FBS is to serve
food and drinks and to satisfy the various needs of a guest.
FBS is one of the main service oriented and crucial division a
hotel can offer. It renders the services of prepared food items,
beverages, and others in a hospitable way to the customers as
per demand.

FBS section contributes a great deal of profit in hospitality industry.
With the increase in importance of business meetings, a range of
personal and social events, a large number of customers visit
catering establishments are just a few reasons of earning revenue in
the industry. The F&B Service providing businesses deliver food
and beverages to their customers at a particular location (on
premise) such as hotel, restaurant, or at the customer’s intended
premises (off premise) in another way.

The significant feature of FBS in the hotel industry is


that, it is the second highest revenue generating
department in the hotel next to the front office. The
important function includes the design and
development of menus, pricing portion control,
wastage control, customer staff relations and staff
training.
This Department comprises of two main
operational areas:

1. Bar (Service
Beverage)
2. Restaurant
(Dining
Service)
OBJECTIVE
The food and beverage services are looked as means of achieving
satisfaction and making yourself feel comfortable in today’s world. The
main objectives of this service are –
• To satisfy the following needs:
o Physiological − the need to taste different varieties of food
o Economic – the need for good value of the price paid
o Social − the need to find friendly atmosphere
o Psychological − the need to elevate self-esteem
o Convenience – the desire for someone else to do the work

• To provide professional, hygienic, and attentive service.
• To impart value for money.
• To retain the existing customers and to bring in new ones.

FBS ORGANIZATION
This is a structure of personnel who are
necessary to do activities to reach the goals of
the establishment. These activities are assigned
to the employees in such a way that no work is
repeated, no work is mislaid, and the goals are
achieved efficiently by the personnel
responsible.
FBS JOB TITLES AND DUTIES
Food and Beverage Service Manager
He heads the department and ensures profit margins are achieved in each
financial period from each section in Food and Beverage Service. He directs,
controls and coordinates the activities of the personnel engaged in producing
and selling products and services in the department. He sees to it that all
activities are all carried out to ensure guest satisfaction.

Assistant Food and Beverage Manager He assumes all the duties of the Food
and Beverage Service Manager in his absence. He assists the FBS Manager in
all of his duties to deliver guest satisfaction during the service.
