SEQUENCE AND SCRIPT FOR RESTAURANT SERVICE

STEP 1: WELCOMING/GREETING THE GUEST (Stand at attention beside the door. Wear your
best smile.)
Food Attendant: Good morning/afternoon Ma’am/Sir. Welcome to Abuelita! We have prepared
a nice table for you. How many are we expecting to be with you Ma’am/Sir?

Food Attendant: Excuse me Ma’am/Sir, may I have your name please?
Guest: _______________________________________________
Food Attendant: Which seat do you want? Smoking or Non-smoking?

STEP 2: ESCORTING/SEATING THE GUEST (Assist for Female Guest, Optional if Male)
Food Attendant: Is this table comfortable for you Ma’am/Sir or would you like to transfer to a
different table?

Food Attendant: Excuse me Ma’am/Sir By the way, I am Mac your food attendant for today.

STEP 3: OFFERING AND SERVING BEFORE-DINNER DRINKS (Cold Water or Guest’s Favorite
Drink)
Food Attendant: Excuse me Ma’am/Sir, would you like to have a glass of water?

Food Attendant: Right away Ma’am/Sir.
(Get the pitcher filled with water. Hold it properly. Stand at the left side to avoid reaching for the
glass.)
Food Attendant: Excuse me Ma’am/Sir, here’s your water.
Guest : Thank you.
Food Attendant: Excuse me Ma’am/Sir, here is our freshly baked bread complimentary of the
restaurant. Just call me if you need more. I’ll be back for the menu

STEP 4: PRESENTING THE MENU (Hold it properly. Open if multiple pages. Bring your Pen and
Order Slip.)
Food Attendant: Excuse me Ma’am/Sir, here’s our menu. Would you like to have some time to
review our menu or shall I take your order now? (If the guest will take orders directly, proceed
to Step 5.)
Guest: ________________________________________
Food Attendant: Okay Ma’am/Sir. I’ll be back after _____ minutes.
(Comeback right after the specified time.)
STEP 5: TAKING FOOD ORDERS (Stand at attention holding properly your pen and order
slip. Right side for American and French Service, left side for Russian Service.)
Food Attendant: Excuse me Ma’am/Sir, are you ready to take your orders?

STEP 6: COMPLETING TABLE SET-UP (At this part, provide the lacking cutleries and table
appointments or remove the extra ones. Check the Guest’s orders for reference.)
Food Attendant: Excuse me Ma’am/Sir. Can I get the extra appointments?

Food Attendant: Thank you Ma’am/Sir. I’ll be back to serve your orders.

STEP 7 AND 8: PLACING OF ORDERS IN THE KITCHEN AND ASSEMBLING OF ORDERS:


(Preparation time for service. At this part, select the tools and equipment for service.)

STEP 13: BIDDING GOODBYE (Escort the Guest upon going out.)

ROOM SERVICE SEQUENCE (CASH)


*Customer wakes up and calls the room service to order his/ her breakfast
*Phone rings
Front desk: Good morning! Room service, this is Mac speaking, how may I help you?
Customer: Good morning, I would like to have my breakfast delivered in my room please?
Attendant: May I know your room number and name Ma’am/Sir?
Customer: Yes, this is ______________of room 2315
Attendant: Alright, Mr./Ms. . What do you like for breakfast Ma’am/Sir? We have
Continental, American, and Filipino breakfast.
Customer: What about your Continental breakfast? May I know it please?
Attendant: Wait for a minute Ma’am/Sir, for our Continental breakfast, we have toasted bread,
fresh fruits, and your choice brewed or dark coffee and glass of mango-pineapple or orange,
Customer: Yeah, I'Il take it and with a brewed coffee and a glass of orange juice.
Attendant: Noted Ma’am/Sir. ls there anything else Ma’am/Sir would you like to add?
Customer: I guess that's all!
Attendant: May I repeat your order Ma’am/Sir, you have Continental breakfast, with 2 slices of
toasted bread, slice of fresh fruits, brewed coffee and a glass of orange juice good for 1-person.
