FOOD AND BEVERAGE ASSESMENT SECQUENCE WITH RESERVATION

Duallo: Food Attendant/Waiter


Alatraca: Guest/Diner
Introduce yourself : Good morning Ma’am before anything else I will introduce to you myself I
am Mr. Zythum Chand P. Duallo. I am here in front of you to demonstrate the
provide restaurant service.
First, I have to check myself, I have to make sure that I am fully hygienic and applied the proper
handwashing technique. Then, I will check the area if it is in good condition and ready for the service.
I will also prepare the needed materials for the service I have to make sure that there are no chips,
crack and finger mark, the flatware has no rust and water marks. I will now set the table with an ala
carte set up. Now that everything is checked and prepared I will now welcome the guest.
WELCOMING THE GUEST
Food Attendant: Good evening ma'am/sir are we expecting a reservation?
Guest : Yes.
FA : Okay ma'am/sir may I confirm if you are Ms. Alatraca with a reservation of table for 1
at exactly 1:00 pm?
Guest : Yes, I am Ms. Alatraca
FA : Okay ma'am/sir we prepared a very nice table for You this way please follow me.
SEAT THE GUEST
FA : Here is the table ma'am/sir is this table okay for you ma’am?
G : Yes. This table is okay. (if the guest says no then ask what she wants or what he/she
prefer its either near the window non-smoking area or in a private area.)
FA : Can I pull the chair for you ma'am/sir?
G : Yes. Thank you.
FA : Your welcome Ma’am/sir by the way I am your Waiter or Food attendant for tonight.
Ma’am/sir would you like me to unfold your serviette and put it in your lap?
G : Yes, Thank You. (if male- rectangle, female-triangle)
FA : Excuse me ma’am/sir I will be back for your refreshments.
TAKING ORDER
FA : Excuse me ma’am/sir here's your water.
(serve the water by pouring it to his/her glass 70% full)
(THEN REMEMBER ALWAYS KEEP THE TRAY WHEN YOUR LEFT HAND IS EMPTY)
FA : Excuse me ma’am/sir I will be back for your Complementary Drink.
: Excuse me ma’am/sir here is your complementary drink which is Lemon Iced Tea
G : Thank you.
FA : Excuse me ma’am/sir I will be back for your menu.
: Ma’am/sir here's your menu for your food selection.
: Excuse me Ma’am/ sir if you’re ready now can I take your order now?
(bring order slip and ball pen.)
FA : First what will be your appetizer ma’am/sir? May I suggest the Parmesan Cheese
Sticks, the cheese is put in a batter then coated with bread crumbs and then fried it is very
crispy and is very flavorful.
G : Okay I will Have that.
FA : Okay ma’am
: Next is your soup ma’am/sir? We have a variety of soups on our menu ma’am, what
will be your choice?
G : I will pick the tomato and onion soup.
FA : Splendid Choice Ma’am.
: Next is your salad ma’am/sir?
G : I will just order the Caesar salad.
FA : Ma’am/sir since you ordered a salad. How about ordering an accompaniment for it?
May I suggest our Sparkling Wine for texture?
G : Okay, I will take that as well
FA : Okay ma’am/sir, Next is the main course ma’am/sir? What will you order ma’am?
G : I will have the Uhm, The A5 Wagyu Steak and the Fettuccini Alfredo Pasta Please.
FA : Excellent Choice Ma’am! And how would you like your steak cooked?
G : Medium Rare Please.
FA : Okay Ma’am.
: Since you ordered the (refer to the guest order)
: May I suggest a bottle of (if red meat wine for your accompaniment. We have a
selection of suggests the red wine, if white meat refer white wine). Which do you prefer
ma’am?
G : I will the Pinot Noir Red Wine.
FA : How about your dessert ma’am/sir we have a selection of Pastries, and Sundaes
Ma’am.
G : Just a Slice of Dark Chocolate Cake Please
FA : Okay Ma’am/sir. How about a cup of coffee to complete your meal, we have a
selection of brewed coffee, espresso and cappuccino? Which do you prefer ma’am/sir?
G : Just a Cappuccino Please.
FA : Will that be all Ma’am?
G : Yes, that will be all.
REPEAT ORDER, MENTION THE TIME OF SERVING, THEN APPLY LIASING (RELAYING OF 4
COPIES OF FOOD ORDER TO THE FF:
KITCHEN FOR FOOD PREPARATION
BAR FOR BEVERAGE PREPARATION
CASHIER FOR BILLING PREPARATION
ONE FOR MY OWN REFERENCE
FA : I will now adjust the table appointments according to the guest order. Excuse me
ma’am/sir can I get the menu?
G : Yes, Thank You.
SERVE THE FOOD
Serve the Bread First
FA : Excuse me ma’am/sir here’s your complementary bread which is a French Baguette
with Butter on the side.
G : Thank you.
FA : Excuse me ma’am/sir I will be back to get your appetizer.
: Ma’am/sir here’s your Parmesan Cheese Sticks Ma’am with a Special Sauce, Enjoy.
G : Thank you.
FA : Excuse me ma’am/sir are you done with your appetizer?
G : Yes, I am.
FA : May I buss it out for you Ma’am?
G : Yes, You may.
(get the cocktail fork first then turn at the back of the guest to get the soiled plate of
appetizer.)
FA : Excuse me ma’am/sir I will now get your soup.
G : Okay.
FA : Excuse me ma’am here is your Tomato Soup, Enjoy.
G : Thank you.
: Excuse me ma’am/sir are you done with your soup? (ask at the right side of the guest)
G : Yes, I am.
FA : Can I buss it out?
G : Okay. (get the soup spoon first then the soup bowl with underliner.)
FA : Excuse me ma’am/sir I will be back for your Salad.
: Ma’am/sir here is your Caesar Salad with a White Sauce, Please Enjoy.
G : Thank you.
: Excuse me ma’am/sir, I will be back for your accompaniment.
G : Okay.
FA : Ma’am/sir here is your accompaniment which is a Sparkling wine May from Belgium
and it has a good vintage of 1989, this is a non-alcoholic beverage.
: Would you like to smell the freshness of the wine ma’am/sir?
(if the guest said yes give him/her the cup or cork of the wine, then pour the wine to his/her
glass)
FA : Excuse me ma’am/sir since you order a bottle of wine would you like to leave the bottle
of wine in your table or call it back??
G : Call it back.
FA : okay ma’am/sir. Excuse me.
: Ma’am/sir would you like to have another shot of wine?
G : No.
FA : okay ma’am/sir, are you finished with your salad?
G : Yes, I am.
FA : Can I Buss it out?
G : Yes.
(you get the salad fork across the guest then the salad knife and the salad plate.)
FA : Ma’am/sir are you done with your sparkling wine?
G : Yes, I am Done.
FA : Can I buss it out?
G : Okay.
(buss out the champagne champagne glass using bar tray.
FA : Excuse me ma’am/sir I will be back for your main course.
: Excuse me Ma’am/sir here is your A5 Wagyu Steak Cooked Medium Rare.
G : Thank you.
(if the guest ordered a specialty of the house served first the light course)
(if the guest ordered two light courses ask the guest if which dish he/she want to served first
during the order taking)
FA : Excuse me ma’am/sir I will be back for your accompaniment.
: Excuse me ma’am/sir here is your accompaniment which is
(refer to the guest order make sure you mention the name, country and year of the
wine)
: Would you like to smell the freshness of the wine?
G : No, Thank you.
(now pour the wine to his/her glass DO NOT ask any more if you will pour the wine to his/her
glass)
FA : Excuse me Ma’am/sir since you order a bottle of wine which do you prefer call it back
or leave in the table.
G : Call it back.
FA : Okay ma’am/sir. Bon Apatite.
: Excuse me ma’am/sir would you like to have another shot of wine?
G : No, I’m fine Thank you.
FA : okay ma’am/sir are you done with your meal?
G : Yes.
FA : Can I buss it out?
G : Yes, please.
FA : Excuse me ma’am/sir. (you get the dinner fork across the guest then the dinner knife
and the dinner plate.)
: Excuse me ma’am/sir are you done with your wine?
G : Yes.
FA : Can I buss it out?
G : Yes, please. (now get the white wine glass using the bar tray)
FA : Excuse me ma’am/sir I will be back for your next Main course.
(ALWAYS REMEMBER CLIP THE TRAY IF YOUR HAND IS EMPTY AND ALWAYS APPLY THE
PROPER HANDLING OF EQUIPMENTS.)
FA : SINCE THE GUEST ORDERED THE ONE MAIN COURSE I WILL NOW ADJUST
THE TABLE APPOINMENTS FOR HIS/HER NEXT MAIN COURSE.
(NOW ADJUST THE TABLE APPOINTMENTS ACCORDING TO THE GUEST ORDER)
FA : Excuse me ma’am/sir here is your Fettuccini Alfredo Pasta Ma’am Bon Apatite.
G : Thank you.
FA : Excuse me ma’am I will be back for your accompaniment.
G : okay
FA : Ma’am/sir here is your accompaniment which is (refer to the guest order make sure to
mention the name, country and year of the wine)
G : Thank you.
FA : Ma’am/sir would you like to smell the freshness of the wine?
G : no.
FA : Okay ma’am/sir. (pour the wine to the guest DO NOT ask any more that you want to
pour the wine to his/her glass)
: Ma’am/sir since you order a bottle of wine which do you prefer leave in the table or call
it back?
G : call it back.
FA : okay ma’am/sir bon appetite.
: Excuse me ma’am/sir would you like to have another shot of wine?
G : No.
FA : Okay ma’am/sir, are you done with your meal? Can I buss it out?
G : Yes.
BUSS OUT THE DINNER PLATE TOGETHER WITH THE SHOW PLATE, DINNER FORK, STEAK
FORK IF THE GUEST ORDER A BEEF STEAK, BREAD PLATE WITH BUTTER SPREADER.
I WILL NOW BUSS OUT THE SOILED DISHES USING THE 3'S WHICH IS SCRAPE, STACK AND
SEGREGATE. IN STACKING I WILL APPLY THE DECOY SYSTEM FROM LARGEST TO
SMALLEST, WITH ITS KINDS AND SHAPE.
FA : Excuse me ma’am/sir I will be back for your dessert.
: Ma’am/sir here is your Slice of Dark Chocolate Cake.
G : Thank you.
FA : Excuse me ma’am are you done with your dessert?
G : yes.
FA : okay ma’am/sir.
I WILL NOW CRUMB DOWN THE TABLE.
FA : Excuse me ma’am/sir, I will now Crumb Down Your table.
AFTER CRUMBING SERVE THE COFFEE.
FA : Excuse me ma’am/sir here is your Cappuccino.
G : Thank you.
IF THE GUEST ORDER BREWED COFFEE BRING COFFEE POT WITH CRUCHETE, IF THE
GUEST ORDER CAPPOCCINO AND ESPRESSO BRING CRUCHETE ONLY WITH AN OPEN
CUP.
(Present the bill while the guest is taking his/her coffee.)
FA : Excuse me ma’am would you like to settle your bill now?
G : Yes.
FA : Okay ma’am I will be back for your bill.
: Ma’am/sir here is your bill please affix your signature below. How will you settle your
bill ma’am/sir is it cash, credit card, or check?
G : I will pay it. Here's my Card
FA : Thank you ma’am/sir I receive you Card Ma’am.
(IF THE GUEST PAY HIS/HER BILL WITH CREDIT CARD AND CHECK, VERIFY IT IN THE
CASHIER.)
FA : Excuse me ma’am/sir we will verify first your card.
: It’s Done Ma’am, here is your Back Thank you.
: May I ask Ma’am? How was our service for your Dining experience?
G : The Service is Very Good, and I like that you are very nice and respectful to me. For
that you will receive 5 stars in your website.
IF NEGATIVE APOLOGIZE AND MAKE SURE THAT ON HIS/HER NEXT VISIT HE/SHE WILL BE
SATISFIED.
FA : my sincere apology ma’am/sir for not meeting your expectation. I will do my best to
satisfy you on your next visit. Thank you and have a good day.
IF POSITIVE BID GOOD BYE AND ASK HIM/HER TO COME BACK.
FA : Thank you ma’am/sir for choosing our restaurant for your food accommodation we will
look forward on your next visit. Good bye and have a very nice day.
BUSS OUT EVERYTHING IN THE TABLE BY APPLYING THE STANDARD PROCEDURE OF
BUSSING OUT. I THE ASSESSOR WILL SAY SO.
