PHRASEOLOGY FOR BASIC WAITERING

(As the guest enter in the restaurant, greet the guest.)


FOOD ATTENDANT: Good morning/afternoon/evening, sir/mam!
Welcome to name of restaurant.
May I suggest a table for you?

GUEST: Yes.

FOOD ATTENDANT: A table for how many?

GUEST: A table for ______.

FOOD ATTENDANT: Ok sir/mam, this way to your table.

(in front of table for the guest)


FOOD ATTENDANT: is this table, is okay with you?

GUEST: Yes
(Pull the chair of the female guest as a courtesy)

FOOD ATTENDANT: Do you want me to unfold your table napkin? mam/sir

(Get the menu list and give it to the guest.)


FOOD ATTENDANT: Here’s the menu list for your selection. Just call my attention if you are
ready to order.
(As you give the menu, leave the table. Give some minutes for them to choose the food they
want to order. You may fill the goblet of the guest with water.)

(As the guest call your attention, approach the table immediately.)
FOOD ATTENDANT: Yes sir/mam, may I get your order.

GUEST: Give me…….. (Appetizer, soup, salad, main course, dessert, tea or coffee)
(As the guest gave the order write it down in an order slip. Ask the guest for the manner of
preparation of their food. E.g. for the steak, is it rare, medium rare, done or well done?...after
writing all the order, repeat the order to the guest.)

Do suggestive selling

FOOD ATTENDANT: May I repeat your order. You ordered (repeat the order) . Did I get your
order right sir/mam?

GUEST: Yes
(Get the menu list and proceed to the kitchen.)

(Make a table adjustment if it’s needed)

(Serving of food will be based on the guest’s order. Serve it according to the sequence of serving
food.)

If you will serve food, go to the left side and if it’s a beverage go to the right side of the guest.
State the name of the food they order, .e.g. here’s your creamy mushroom soup; enjoy your soup
sir/mam. If the guests finished eating their food, always clear the table first before serving the
next main course

FOOD ATTENDANT: Are you done with your soup sir/mam?

GUEST: Yes
(As you get the soup plate bowl, you can ask the guest; How’s your soup sir/mam?)
GUEST: It’s so creamy.
(Proceed to the next main course until the food attendant served the last course.)

PRESENTING THE WINE:


FOOD ATTENDANT: Excuse me ma'am I would like to present to you the bottle of white
wine that you ordered, it's carlo rossi that contains 750ml with 12.5% alcohol volume it has a
good vintage year of 2013 and made from (idk) Europe it also has elegant taste and aroma that
will surely compliment to your dish. Shall I open the bottle for you ma'am?

GUEST: Yes please.

(Opening the wine: Use the blade to remove the seal. Hold the bottle firmly. Place the tip of cork
screw in the center of the cork then twist it downward just enough to avoid pieces of the cork
from dropping into the wine. Bend the fulcrum until its dent touches the lip of the bottle. Pull the
body of the waiter’s friend up. Keep pulling until most of the cork is out of the bottle. Remove
the cork and present it to the guest.)

FOOD ATTENDANT: (pour a little amount of wine in the wine glass) Would you like to taste
it first ma’am/sir? How’s the taste ma’am/sir?

GUEST: It’s good.

FOOD ATTENDANT: Would you like me to pour the glass again?

GUEST: Yes please.

FOOD ATTENDANT: (fill the wine glass half and leave the bottle of wine in front of the guest
facing the label of the wine.) Enjoy your wine maam

SETTLING OF BILL PAYMENT:


(Approach the table holding the bill folder. Give it to the guest. If the guest gave you any bill,
state the amount received)

FOOD ATTENDANT: I received Php. 1000.00, please wait for your change.
(If there’s a change put it in a change tray along with receipt.)

FOOD ATTENDANT: Here’s your change sir/mam.


(If the guests leave the change it means it’s your tip. Don’t forget to thank the guest.)

GUEST: Keep the change!

FOOD ATTENDANT: Thank you sir/mam.


(As the guest stand up and ready to leave;)

FOOD ATTENDANT: Thank you for coming sir/mam. Come again!


(Then clear the table with soiled dishes and linen. The place with a new table appointment.)

BIDDING GOODBYE
Thank you Mam/Sir. Have a great day! Hope to see you again.
