The Kindergarten to Grade 12 Education Curriculum (K -12) is implemented in the
Philippines to create a functional educational system that would produce productive and
responsible citizens with the essential skills and competencies for life and employment.
This educational program is said to be an output-based where the every student is
expected to apply in real life everything that he or she learned. This program covers
kindergarten, the six primary education, four years of junior high school and two years in
senior high school. For senior high school, students are free to choose of what track and
strand they would like to take based on their abilities, knowledge and interests that will
help them in preparing for their tertiary education as well as in their career.

In Assumpta Technical High School (ATHS), academic track is offered with the
strands of Accountancy, Business and Management (ABM) and Science, Technology,
Engineering, and Mathematics (STEM). Focusing the Grade 12 ABM students, they are
expected to come up with a business enterprise simulation wherein all the key concepts
and processes of Accounting, Business and Management (ABM) are integrated and applied
in real-life activities following the business cycle: business opportunity search,
product/service development, business formation and organization, business
implementation and control, business wind-up, and relevant management reporting in the
context of ethical standard and social responsibility.

The ATHS holds its celebration of Family Days every year during the month of
February for the students and their families to have simple, meaningful and beautiful
bonding time with each other. Through this, the Grade 12 ABM students would be
simulating their respective business enterprises during the said celebration. It would be a
win-win situation since the families and visitors will be enjoying the services that will be
offered by the ABM students and for the ABM students, it will be the best opportunity to
apply all the learned competencies and equipped skills.

In the context of the market, the most known and prominent business offering is a
food business primarily because food is part of the basic necessities of humane and besides
food never goes out of style. Moreover, food in celebrations unites people of the same
family and friends, giving them a common bond. In all sorts, food that adorns them brings
each member closer together around one table, sharing the joy and love through food.

With this in mind, the aspiring entrepreneurs of Grade 12 ABM students decided to
put up a food stall business offering the most liked foods of then and today. The foods and
drinks to be offered are well-thought off through the trends, likes, research, and availability
in the market.

1.1. Name of the Business

The name of the business is Unlibox.

This is inspired from the trending movie of today entitled The Bird Box. The word
“Unli” itself signifies the business’ uniqueness among others. It is also a short and simple
business name that would be easily remembered by many.

1.2. Location

Since it has been identified that the business will be simulated during the Family
Days, the location of the business is apparently at Assumpta Technical High School. All the
businesses of the Grade 12 ABM students will be operating for three days at the Assumpta
Court 2.

1.3. Mission and Vision

1.3.1. Mission

The mission statement of this business is to provide an exceptional dining


experience to the Assumpta family with outstanding performance as ABM students
and entrepreneurs

The target market will be mostly composed of students with their families, the
business aspires to provide an experience of a food celebration since this local tradition
bonds the people with lively and joyful atmosphere through having the theme of fiesta in
the business venture. Moreover, the purpose of the entrepreneurs for theirselves is to
apply and put appropriations of all the competencies taken and learned under the ABM
strand through business enterprise simulation successfully and efficiently.

1.3.2. Vision

The business visualizes itself to be the greatest earner business


enterprise and be popular with high quality and captive yet affordable products
Given the fact that the business is an expected output of the ABM students
who are the entrepreneurs, the business desires to earn more than the required minimum
and even exceed other businesses. Also, being popular and well-loved by the market is
what the business sees itself as it is the only business perhaps offering the in-demand
unlimited rice.

1.4. Objectives

The main objective of this business enterprise is to earn at least 50% return on
capital.

Following are the other desired objectives to be achieved by the entrepreneurs:

 To earn profit
 To apply the entrepreneurial and managerial skills
 To serve quality and best tasting food and drink products
 To give the cravings and wants of the customers
 To be the only business that offers unlimited rice meal
 To offer best-tasting yet affordable meals
 To meet or exceed the standards of the customers
 To participate actively in the business enterprise simulation
 To earn additional income for the business’ corporate social responsibility
 To promote a lively environment through the fiesta nature of the business
 To serve the people in the community whole-heartedly
 To be a place for food bonding of families and friends

1.5. Business Logo and Tagline

1.5.1. Business Logo

A business logo serves as the representation of the business to make it


known to the market and it will be the face of the business to the customers.

The logo above represents the concept of the business As seen above, it is
surrounded by colourful “banderitas” and arrows symbolizing the fiesta theme of the
business. An image of a box with the symbolic red blindfold and utensils are shown in the
logo where the box is where the food offerings of the business will be served especially the
unlimited rice. The representative red blindfold represents the origin of the business name
from the movie Bird Box which also corresponds with the business tagline.

1.5.2. Business Tagline

A business tagline is what makes a business known and popular among the
customers thus having a simple yet catchy tagline is prepared for this business.
“Mapapapikit sa sarap!”

Since the name of the business is The Unlibox, the tagline as well is inspired
from the trending movie entitled The Bird Box wherein people wear blindfolds or close
their eyes to save themselves. In this business, the customers are assured that best tasting
meals awaits them and surely, their eyes will be automatically closed upon tasting these
meals.

Marketing Mix

To thoroughly be an effective business, this business uses the marketing tools for
the marketing mix which are to be blend for the service to the market in order to get the
business’ desired response.

1. Product

The product offering of the business is mainly food and drinks. Specifically, these
are rice, rice toppings (can also be snacks), nachos and fries, gulaman, and shake beverages.
The detailed description and illustration of each product are shown below.

1.1. Product Description

a. Rice

The rice and toppings have a perfect combination to satisfy both


customers’ cravings and budget. The rice that will be offered by the business will be varied
into:

a.i. Plain Rice

This is the commonly used rice that can be


partnered with any dish. For those who do not want
any flavour or additional ingredient on their rice,
plain rice is the best option. Plain makes it the best
oftentimes.
a.ii. Garlic Rice

Also known as Sinangag, this is steamed rice


fried with lots of garlic usually served as a breakfast
food. This comes best with fried toppings. Its bursting
flavour and aroma of garlic is what the customers
want.

a.iii. Chaofan

This is a dish of cooked rice that has been stir-


fried mixed with other ingredients such as egg,
vegetables, meat and soy sauce. It is often eaten as an
accompaniment to another dish but mostly it is eaten
by itself.

b. Toppings

These toppings are to be partnered with any rice or can be solo order
for snacks.
b.i. Egg

The sunny side up egg is cooked on one side


only with the yellow part on top. It is fried without
breaking the yolk or being turned over, with the yolk
remaining visible and somewhat liquid.

b.ii. Siomai

Siomai is a popular dim sum dish which


consists of ground pork or shrimp or both combined
with extenders such as garlic, green peas, carrots and
the like which is wrapped in wonton wrappers. It is
traditionally steamed but later on, the fried variant
becomes popular resulting in a crisp exterior.

b.iii. Dumplings

A dumpling is a delicious, bite-sized food


that’s made of savory ingredients wrapped in dough
and cooked. It may be filled with meat, fish or
vegetables. It can be wrapped in a wonton wrapper,
steamed or fried.

b.iv. Lumpiang Shanghai

In fun bite sizes and served with sweet and


sour sauce, they are the perfect fried toppings. These
Filipino spring rolls are usually filled with mixture of
ground chicken or pork, chopped vegetables such as
carrots and onions. It is mostly present at any
celebration.
b.v. Hotdog

Loved mostly by children, hotdogs are


processed meat products by mixing chopped meat
with various curing ingredients. These can be in rice
meal or snacks.

c. Snacks

c.i. Snack Box

This Snack Box is a combination of fried


toppings offered by the business where the customers
can have variety of snacks and at the same time, they
can save money. This box contains siomai,
dumplings, hotdogs, and others.

c.ii. Stick Fries

Fries are also great for pica-pica snacks. For


healthier choice, this stick fries are made from natural
steamed and blended sweet potatoes. These can also
come with flavours or dip-sauce.
d. Drinks

The following are the choices for drinks offering of the business which
can greatly come with the rice meals, toppings, snacks, and solo order.

d.i. Gulaman

Gulaman drink is the most popular drink wherever


people go because of its sweet taste that can come with any
meal. This completes especially the rice meals. To make it
more interesting and enjoyable, it is filled with pearls which
almost everyone loves to chew.

d.ii. Shakes

Shake beverages are “in” for the customers to freshen up and


cools up theirselves after their respected duties, work or even to relax while enjoying. To
fully take pleasure from shake drinks, below are the choices to choose from which are
adapted from then and today’s favourite and trends:

These are pearls, also known as sago,


which can be added into the shake beverages if
desired by the customers for more enjoyable
drink.

1.2. Price List (Menu)

A menu of a food business shows the list of the food and drink offerings and
also the promos together with their corresponding prices. Since the business is a fiesta-
themed, the menu is also made with lively colors and attractive designs to brightly catch
the attention of the customers.
2. Place

As mentioned, all of the businesses including this business venture will be located at
the Assumpta Court 2 of the Assumpta Technical High School. Below is the crafted and
simple outline of the space division for the businesses. The logo is placed where the
business is probably placed in the food park.

2.1. Layout

There is an allotted place for the business and the utilization of the space is well-
planned as shown below. The simple layout for upper and front view is provided.
3. Price

Since the highest objective of the business is to earn profit, specifically to earn at
least 50% return on capital, the foods, drinks, and meal sets are priced considering the said
objective and essentially the affordability of the whole market community including the
families, students, teachers, and such. Also, the competitors and cost of the products to be
offered are also considered in determining the prices of the products to be offered. Below
are the pricing strategies used in this business venture:

3.1. Pricing Strategy

The main offering of this business is rice meals or rice toppings. Customers however
are freely to choose their selected type of rice and chosen toppings.

For the rice and toppings, product line pricing is applied as the price strategy. As a
given, plain rice has lower price compared to garlic rice and chaofan has different price as
well. The prices of the toppings are identified through two strategies: a) Since customers
have their options to add toppings to their rice, different prices apply. For example, chaofan
is a rice with meal ingredients already however if the customer chooses to add other
toppings such as hotdog, then the varied prices may apply; b) As said, customers are free to
select their own set of meal, toppings are necessary for the main product which is the rice.
Given that the customer selects the plain rice, it is then a need to have the topping to be
partnered with the rice such as siomai or hotdog thus another price applies. To fully
capture the market, the business will offer its Unli Chaofan as a promo where its price is
based on the product bundle pricing in which the customers can enjoy much amount of the
product at lesser price. This strategy is also used for sets of rice meals and drinks and
toppings as snack and drinks.

In settling on the prices of the food and drinks, the behaviour of the market is also
highly considered. The odd-even pricing is applied because this can affect the way a
customer thinks toward the products’ prices. For example, the unlimited chaofan is offered
for P 99. If thoroughly analyzed, it can already be considered as P 100 but with the first
number of the price, it seems to be lesser than P 100. These also apply in the few meals and
snacks.

Using the said pricing strategies, below is the initial price list of the food and drinks
to be catered by the business. However, bear in mind that prices are subject to change.

4. Promotion

To better improve and boost the sales of the business, a well-planned and striking
marketing strategy. The UnliBox decided to have different promotional strategies so that
the business will be highly promoted and strongly advertised before and during the
business operations. Online advertising, distribution of flyers, and putting up posters will
be used as direct marketing promotional strategies. First of all, the promotions are
undifferentiated marketing wherein the business will have the same marketing to different
segments in the target market.

The first promotional activity is online advertising. Through today’s modernization


on technology, online advertising has been identified and used one of the most effective
ways for businesses to expand reach, find customers and diversify revenue streams. It is
geared toward defining markets through unique and useful applications. One of the most
useful and trend online applications are the social media platforms. It is evident nowadays
that almost everyone has online access and social media accounts. It is also convenient for
the maker of the pages since it is easy and uncomplicated. With this, the online advertising
of the business will be prioritized through social media platforms specifically Facebook and
Instagram where people nowadays engage theirselves with. This is where updates,
informations and announcements can be posted to make the community and market
aware. With here, everyone can also share their ideas, insights, and feedbacks about the
business as well as they can post reviews and comments.

The secondary and tertiary promotional advertisements would be done through


traditional marketing wherein the usage of flyers and posters will be used. These flyers and
posters are inspired from the fiesta-themed of the business as well as its logo. These then
will be distributed and put up within the business location before and during the run of the
business.

During the business operation days, there would be performers or gimmick to


highly promote the business by interacting with the market through games and videos.

Shown below are the sample promotion of the UnliBox Facebook page and the
UnliBox Instragram account. Also, t he illustrations below are the initial design and layout
for the flyers and posters.
5. Packaging
The packaging of the products is just a simple white paper food box for rice meals
and paper cup for snacks and drinks. Following the virtue of simpliticy, these are modified
and designed simply with the logo and brand name of the UnliBox. The customers then will
only be focused to festive logo of the Unlibox, with only simple and plain background. Since
Assumpta Technical High School is an eco-friendly environment and is promoting ecology
care, these paper food containers are made of pulp extracted from the trees and water
making them biodegradable. As these containers are made of disposable materials, they
decompose quite easily thus making no harm to the environment. These products as well
are convenient to use and to carry. They are to-go containers for take-out orders. These
packaging also are safe and has no toxic substances in these. It is also safe and best for use
either for hot or cold food and beverages.

6. People

Considered as the manpower of the business, people are important to efficiently and
effectively run the business operation. It is also essential to have division of work so that
teamwork and camaraderie will be evident within the people of the business. Presented
below are the names of the people, job and assigned tasks for the business.

Kristel Reign B. Nucum She is the overall manager. She is


responsible in overseeing the whole
production and any business activity which
includes directing and leading employees in
daily operations Also, she will deal with the
outside affairs such as coordinating with the
suppliers, settling issues with the
customers, and the like.
Hale Khim Salonga She is the head chef/cook. She is responsible
over any activity within the kitchen most
especially the food and drinks that will be
served to the customers.
Christine Joyce Talavera She is the assistant chef. She is responsible
in maintaining the order and cleanliness of
the kitchen. She is also in charge with the
inventory and stocks which include the
checking of available supplies. She will assist
the head chef in preparing the dishes and
drinks.
Rochel Ann Basilio She is the cashier. She is responsible for
receiving the payment of the customers as
well as giving back the change. She is in
charge of the finance management of the
business.
Juliana Arcardo They are the waiters. They are responsible

7. Process

The business operation will be successfully done if right procedures will be


observed and followed. The UnliBox has two processes: one is for the business itself and
another one is for the customers.

The first procedure is shown below:

Raw materials and ingredients will be bought by the entrepreneurs from the
suppliers. These ingredients then will be used by the entrepreneurs, employees or staff to
do the proper process. The ingredients will undergo the process of cooking, making,
preparing and such to be the output which maybe food or drink. Entrepreneurs then will be
the one who will sell the products to the market. Once customers buy the products of the
business, an exchange will occur. Customers then as consumers of the product will be the
end-user.

The above illustration is the suggested flow of customers’ buying procedures. First
of all, customers should look at the menu to know if the business’ meals are in for their
wants. Next is they should fall in lin. Then, their meals should be decided to order and then
pay at cashier. There are also games prepared in which they can play to earn discounts, free
items , and more! After that, they can enjoy the eating feast of food. However, in between
the procedures, customers may be undecided particularly in choosing and deciding.

Marketing Program

A. Market Description

It has been identified that the Unlibox will be operating inside the school and during
school celebration. With this, it is expected that there would be more prospective
customers than the original number of Assumpta community. Students and teachers are
the stay-in customers while the families, friends, and visitors will be the outsider
customers which may come in large number.

People whenever and wherever they are, they mostly haunt the joy of having food.
Some may like to take in big meals; some may like snacks, drinks for few and most like to
have them all. Engaging into a business, it will start through identifying, knowing, and
describing the target market.

The business will cater to the people who want to have the best tasting rice meals,
snacks, and cold drinks in a welcoming and fun ambiance. The customers will differ
according to their work, age, gender, social groups, and interests.

Work and Occupation

Given that the business enterprise is within the school, students, teachers, school
staffs and employees are the main customers in the business. There is also a big possibility
that visitors, parents, and outsiders can be professional, students or ordinary people.
Nonetheless, products still are good for everyone.

Age and Gender

The Unlibox will offer its best tasting yet affordable products to all the members of
the community. Rice meals would be loved by the customers, youth to adults specifically
ages 10 – 60 years old. Snacks such as siomai, fries, and hotdogs would be appreciated by
the young people ages 10 – 20 years old. The cold drinks would also be great hit for
everyone. Men and women would definitely love the rice meals, snacks, and cold drinks.
Women might be fond of the snacks while men might like the unlichao fan promo.

Social Groups

In the context of everyday living, people would always consider where they can
have an enjoyable food time alone, with families or friends without sacrificing the quality of
foods. Students and young people with “barkada” may find the business suitable for them
because of the food promos for big groups as well as for families. Partners would also be
encouraged to buy in the business because of the promos for two. It will also be a
welcoming place for everyone. Those who like to be alone are greatly welcome also with
the to-go and solo orders. The business is perfectly made for everyone and also it is in the
setting of a food park, it can be a place of gathering, celebration, or bonding.
Interests and Lifestyle

Nowadays, people love to eat in enormous quantity. People tend to find food
services offering unlimited or buffet style. Unlibox adopts this interest and trend to be able
to capture the market. With the unli-chaofan, people who like rice will surely be fond of the
unlimited style. Finger foods such as fries are also in trend today especially for teenagers.
What never goes out of style are the streetfoods because they are part of every Filipino’s
merienda. As a tropical country, Philippines experience a warm to hot weather thus
everyone loves to have cold drinks which will be offered by the Unlibox.

For consumer demand, it is the ability of consumers to purchase a quantity of


products in a given period of time and also is their willingness to purchase. It is noticeable
that if a product is offered at a cheaper or lower price, the more consumers will buy it. The
products of Unlibox are cheap and affordable but the health of the market is also
considered. Unlibox uses healthy ingredients such as eggs, rice, and vegetables to produce
healthy products. As estimation is used, people who will buy and consume the products of
Unlibox will be around 75% including the students, faculty staffs, family, outsiders or
visitors. Customers usually make buying decisions based upon more than just the lowest
price. There are basic components of the Unlibox meals such as ordering, cooking,
delivering, and customer service. Orders are customers’ request to prepare and deliver
food. For the cooking and delivering, to avoid delaying of orders and quarrel between
customers and business employees, meals could be pre-cooked or cooked after an order is
received so that it is already prepared ahead of time. Customer service would be friendly in
such a way that crews will be lively, cheerful, and open to customers so that more
customers will be encouraged to buy at Unlibox.

C. Supply

In view of the fact that this business is a food service business, it is expected to have
various raw materials or ingredients to be processed for the final output as foods or drinks.
The business will have different suppliers based on the accessibility and price. For the rice,
rice toppings, snacks, shakes, street foods, packaging, vegetables and more, the suppliers
will be the Apalit and San Fernando Public Market because the prices are inexpensive,
there are also many choices to choose from, and these are both accessible for the
entrepreneurs. SM Supermarket will also be one of the suppliers where other ingredients
can be bought which might not be available in the public market. For the eggs, the business’
supplier is the Mupra Poultry Marketing Cooperative with the fact that the eggs’ prices are
much cheaper there than markets because it is poultry. These suppliers will be of
important factors to operate the business in such way that these can affect the products’
prices and quantity. These suppliers are one of today’s guaranteed dealers of different
ingredients to assure the best quality products for the customers.

To fully assess the market industry of this business, SWOT analysis will be utilized.
First, the internal factors or the microenvironment will be identified namely the Strengths
and Weaknesses.

Strengths are what the business enterprise excels at and what makes it different
from the competition. Below are the specific factors:

Strengths

 The entrepreneurs are well-equipped in necessary skills such as the managerial,


entrepreneurship, and communication skills.
 There is availability of equipments.
 The business enterprise is located within the school vicinity.
 The business will operate in time of celebration.
 The entrepreneurs are customer-attentive.
 The prices of the products are affordable for everyone.
 The offering of “unli-chaofan” will be the business’ advantage.
 There are wide ranges of choices for meals to fit customers’ appetite.
 Products are prepared and served quickly.

As ABM students, entrepreneurs are already equipped with the skills


needed for a business such as able to manage, control, plan, communicate, and to
sell. Entrepreneurs are not anymore required to buy equipments because all of them
have equipments in their homes which are contributed to the operation. An
advantage also is that business is in a school setting where market already exists
and payment for business place is not a problem. Various pricing strategies are
applied in regard with the market’s affordability and operating costs. The business
adapts the trend in food industry which is unlirice specifically the unli-chaofan
making it unique among other businesses. Also, different meals sets and solo orders
are prepared for the different customers’ appetite and cravings.

Weaknesses

On the contrary, weaknesses of the business are defined as the areas that
need improvement so that it will remain competitive.

 Ingredients would be expensive.


 There would be times of uncontrollable management within the business operation.
 Shortage of ingredients might happen.
 Insufficient place accommodation

Since the entrepreneurs are just estimating the costs, prices, and profits for
the first operations, unexpected events might occur. As a food business, there are
peak hours such as lunch wherein customers might come as crowd and the
management can’t entirely control the correct flow of business operation. Also,
customers are expected to be in a big number, shortage of ingredients might happen
especially if sales beforehand are high. Since it is a food park also, it is expected to
have small space to accommodate a mass number of customers.

While on the macro-environment, there are also factors to grab as these are the
favourable external factors that can be used for competitive advantage.

To be a favorable business, there is a competitive advantage of offering unli-


rice that will attract more customers and grow the target market more. During the
run of the business, it will also be a great opportunity to advertise the business to
the market through promotional activities. The decrease of prices in raw materials
will be an advantage to the business to lessen up expenses.

It is a big threat that competitors will offer the same products to the market
especially if they have cheaper price. Uncontrollable factors such as weather can
also be a threat to the business operation as well as the increase of raw materials.
The location of the business may also affect its atmosphere towards the customers
which may be uncontrollable because it is already fixed. The increasing of prices of
raw materials would harm the business as it may add the expenses up.

B. Competition

It is with the nature of every business that it will experience competition. Most
people say that a good business is competitive. The UnliBox is one of the small businesses
that will operate in Assumpta Technical High School on the celebration of family days.
UnliBox will be offering rice meals, snacks, and beverages. However, it is not the only food
stall with the same kind of products. There are other businesses also from other Grade 12
ABM learners who may have the same products but with few differences. Unlibox has a
total of seven competitors from the small business enterprises which may either have
lower or higher price or fewer or more products. Also, one competitor is the school canteen
who offers different kinds of foods and drinks that might also be available at the Unlibox.

To be a good competitive business, the entrepreneurs of the Unlibox completely


assess the enterprise’s strengths and its edge from others. It will also improve its
weaknesses and make them strengths as much as possible. To respond to the changing
needs and wants of its customer, a marketing research was conducted ahead of time.
Unlibox decides to offer “unli-chaofan or unli-rice” that will serve its competitive
advantage. Upon knowing its competitors, the business will have no control over them but
may find the new opportunities to grab to reach its goals and achieve its objectives.

C. Barrier to Entry

According to Will Kenton (2018), barrier to entry is the existence of high start-up
costs or other obstacles that prevent new businesses from easily entering the business
industry. Barriers to entry benefit existing business such as the school canteen because
they protect their revenues and profits. Other obstacle that Unlibox is refrained from is the
government intervention such as the business regulations and permit since this is a school
activity and academic requirement. But, it can still be affected by government through price
hikes and competitors. Unlibox offers wide variety of foods with unli-chaofan but
competitors might benchmark the business and might offer wider foods variety. Overall, it
is not that difficult to start and run the business enterprise since it is already in a school
setting, the target market already exists, the entrepreneurs are well-equipped, and the like.

D. Threat of Substitute Product

In a business industry, substitute products exist to offer the same or similar benefit
to the market as a product from another business. The threat of the substitute is the level of
risk that a business faces from replacement by its substitute.

The products to be offered by Unlibox can also be offered by the school canteen and
other businesses but some with modification in price and quantity. Since all the businesses
and the canteen will be situated in one setting only, it is expected to have almost or same
product offerings. However, Unlibox already foresee this as a threat and decided to have
twists with the products. There are add-ons to choose from, promos for lower prices and
discount for higher quantity bought. Unlibox will still and always be optimistic with its
vision despite of the threats that might rise.

Sales Forecast

With the estimated of at most 3,000 members of ATHS community during the
family days celebration, the entrepreneurs have foresee what will be the standing of the
operation of the business. Below is the projected sales forecast for the three days of
operation.

For first day, since most customers will be students and school employees, the
revenues and expenses are not that high thus the profit is also usual. On the second day and
it is already a week-end, visitors and families are expected to come as customers aside from
the school community member thus the revenues and expenses increase by 30% as well as
the profit. For the third or last day, it is when the people in Assumpta are in large number
thus the sales and expenses are expected to boost up to 50% of the previous. Note that
utilities expense is only paid for the first day because it will already cover the three-day
operations. The observable fact is that the higher the revenues, the higher the expenses.
Profit is also increased which is good for business.

Aside from the position the manpower has, they also have their particular
duties to do and responsibilities to assume. Below is the identified and specified to-do’s of
each role to perform.

Overall Manager She or he oversees the entire business including the


operational, financial, and marketing activities. She or he
directs the employees or staffs for efficient and effective work.
She or he also ensures the organized operation of the business.
She or he as well deals with the customers if there are any
conflicts to settle. The harmony and synchronization in the
business should also be maintained by the overall manager.
Cook/s They are the ones who prepare the products to be offered by
the business. They also should maintain the cleanliness of their
working area. They should also do the packaging of the
products in dine-in or take-out form.
Cashier/s They are the one who do the transaction with the customers
that involve money. They are the one who receive money and
give back customers’ change. They are the one as well who get
the customers’ orders. Also, they are in-charge to have every
transaction a receipt.
Server Primarily, they serve the orders of the customers. They also
deal with granting and rejecting
Marketing Agent She or he is responsible in promoting and advertising the
business to the market. She or he is the one who manages the
social media accounts of the business. The layout, design, and
strategy in putting up posters and distribution of flyers should
be done as well by the marketing agent.
Accountant She or he is the one who keep track of all the financial
transactions of the business. All of the records shall be kept
properly and confidential. She or he must not disclose the
financial information of the business to the non-authorities.

iii. Selection of Job Applicants

For the manpower of a business to be excellent in performance and


productivity, there are certain steps of meticulously selecting and choosing the deserving
and right people for the job.

1. The business organization will first identify all the available job
vacancies to be filled through applicants.

2. The business will provide recruitment ads through social media or


posters and flyers. It will contain about job hiring for different position
available in the business together with the job descriptions, qualifications,
and requirements to do.

3. The interested applicants shall submit personal information and other


documentary requirements to the organization head.

4. The applicants then will be classified and selected depending on their


credentials and abilities with the basis of the job qualifications and
specifications.

5. A job interview will be conducted to fully evaluate the applicant for their
desired position.

6. There are also some tests to be accomplished by the applicants to


examine their skills and abilities such as personality test, aptitude
test, and technical or vocational test.)

7. The last would be the decision of the business whether to hire the
applicant or not. If hired, there are offerings and matters to discuss
about the job.
8. The hired applicant can already start in his or her job at a specified date
given that he or she will comply with the business regulations.

iv. Employee Development

Improvement and development will always be present at any organization.


In this case, the business will look forward to step up and strengthen the employees’ ability
and personality. This will be done through having different manners. First is the proper
training before the job. Second is to build up their knowledge through seminars and
additional learning sessions. Another is having the background of their educational
specialization such as their Technology and Livelihood Education (TLE) specialization.
Employees are also highly encouraged to do self-study about the business, market, and
environment through the available blogs, reviews, trends, and techniques which will be
beneficial for them and to the business as well.

B. Machines

1. Ice Crusher It is a device used for crushing ice cubes into


smaller particles. The ice crusher is the perfect
tool to add to any kitchen or wet bar. The strong,
stainless steel blades quickly crush cubes of ice
into fine pieces that are perfect for any beverage.
Simply drop cubes into the feeder chute, adjust
the size setting and power on. Powerful blades
within the mechanism go to work and dispense
the freshly crushed ice into a bucket, jug or
similar receptacle.

2. Liquefied petroleum gas or liquid LPG is an alternative type of fuel for vehicles,


petroleum g as (LPG or consisting of hydrocarbon gases in liquid form.

3. Gas Stove A gas stove is a cooker/stove which uses syngas,


natural gas, propane, butane, liquefied

popular for reheating previously cooked foods
and cooking a variety of foods instantly within
seconds and minutes.

5. Blender A blender is a glass or stainless steel jar with a


tight-fitting lid. It rests on top of a small motor
that spins a rotary blade inside the jar. The
motor runs the rotor at a variety of speeds. Use
the machine to blend and puree foods. It is to
make smoothies, cream soups, sauces and gravy
and anything that requires food to be blended,
pureed or whipped.

6. Rice Cooker

A rice cooker is simply used to cook rice and can


also be used for steaming foods such as siomai.

C. Materials

Aside from the machines to be used for the business operation, there are also
materials needed to make and produce the business products. These materials can be
classified into the usage in the kitchen for preparation of the products and the use in
packaging for serving the products.

1. Utensils (Spoon and Fork) A spoon is a utensil consisting of a small


shallow bowl (also known as a head), oval
or round, at the end of a handle. Present day
spoon are made from metals. Forks are used
to push foods such as rice onto the spoon as
well as their western usage for piercing the
food. This will be used by the business for
the preparation of specific food.

6. Peeler A peeler (potato peeler or vegetable peeler)
is a kitchen tool consisting of a slotted metal
blade attached to a handle that is used to
remove the outer skin or peel of certain
vegetables, often potatoes, carrots, and
fruits such as apples, pears, etc.

7. Rice Spoon
Rice spoon is a kitchen utensil that is usually
made of wood and used to mix seasonings
with warm sushi rice. The paddle will toss
the rice without cutting the grains where
metal spoons should not be used.

8. Tray Tray is an open receptacle with a flat bottom


and a low rim for holding, carrying, or
serving products.

9. Measuring Cups A measuring cup or measuring jug is a


kitchen utensil used primarily to measure
the volume of liquid or bulk solid cooking
ingredients such as flour and sugar,
especially for volumes from about 50
millilitres upwards. Measuring cups are also
used to measure powders and other
ingredients.

10. Tongs Tongs are a type of tool used to grip and lift
objects instead of holding them directly with
hands. There are many forms of tongs
adapted to their specific use such as turning
a dish without removing it from the oven,
toss a stir fry and many more.

11. Frying Pan A frying pan is used for frying foods over
moderate to high heat so they should be
thick enough to conduct heat evenly. There
are several sizes available and they are
generally round in shape. It is also known as
a "skillet."

12. Burger Griller with Fryer A burger griller with fryer is kitchen
equipment used for cooking burgers frying
meals such as fries and siomai. For the
business, it will be utilized for the preparing
and cooking of the Chaofan rice.
D. Methods

To entirely produce the products of the Unlibox, there are certain methods and
processes to observe and to strictly follow. The detailed and complete methods are shown
below specifically with inputs, processes, and outputs of each product.

D.1. Food Products

1. Chao Fan

Chao Fan is a dish of cooked rice that has been stir-fried in a wok or a frying pan
and is usually mixed with other ingredients such as eggs, vegetables, seafood, and meat. It
is often eaten by itself or as an accompaniment to another dish.

Ingredients:

o 4 cups cooked rice o 1 Tbsp. garlic, chopped


o 1 Tbsp. garlic, chopped (another for rice)
o 1 small red onion, minced o ¼ cup carrots chopped finely

o 2 raw eggs o salt and pepper to taste

o 1 cup diced or cubed pork o 1 tsp. chili powder (optional)

o 1 cup cabbage, finely sliced o 1 tsp. curry powder


o ¼ cup spring onion, chopped o 4 Tbsp. cooking oil
o 2 Tbsp. soy sauce
o ½ tsp. sugar

Procedures:

1. In a medium size pan, heat one tablespoon of cooking oil and saute onion and
garlic until fragrant. Then add carrots, bell pepper and cabbage. Stir cook for
a few minutes and set aside.
2. In the same pan, heat another tablespoon of cooking oil and cook the beaten
eggs until it becomes scrambled eggs. Then stir until the eggs are separated
to each other. Remove from the pan and set aside.
3. In the same pan, heat again one tablespoon of cooking oil and saute the
cubed pork on a medium-high heat for 1 to 2 minutes until it turns to brown.
Remove from the pan ans set aside.
4. In the same pan again, pour some cooking oil and saute the garlic until
fragrant. Then follow the cooked rice and stir fry with the garlic. In a small
cup combine soy sauce and sugar and mix until it is dissolved. Pour on the
rice and stir until the soy sauce mixture is thoroughly mixed with the rice.
5. Then add the sauteed pork, salt, pepper. Next, add the eggs and last but not
the least are the vegetables and stir cook for a few minutes.
6. Transfer to a serving plate and garnish with chopped spring onions.

2. Plain Rice

A plain rice has been cooked either by steaming or boiling. The terms steamed rice
or boiled rice are also commonly used.

Ingredients:
 1 cup of white rice
 1/2 teaspoon salt

Procedures:

1. Bring 1 1/2 cups water to a boil in a medium saucepan. Stir in rice and salt and
return to a boil over medium-high heat.
2. Reduce heat to a simmer, cover, and cook until rice is tender and has absorbed all
the liquid, 16 to 18 minutes (check only toward the end of cooking time). The rice
should be studded with craters, or steam holes, when it is ready.
3. Remove from heat and let steam, covered, for 10 minutes. Then fluff with a fork and
serve.

3. Garlic Rice

Garlic Fried Rice or Sinangag is steamed rice fried with lots of garlic. This is a
favorite side in the Philippines and most of Asia since rice is considered as the staple food.
Usually considered as a breakfast food for Filipinos ,this way of cooking rice goes well with
several fried foods.

Ingredients

 6 cups rice steamed


 3 tbsp garlic minced
 2 tsp salt
 3 tbsp cooking oil

Procedure:

1. Combine rice and salt then mix well.


2. Heat the pan and pour the cooking oil.
3. When the oil is hot enough, put-in the garlic and cook until color turns brown
and texture is crispy
4. Add half of the rice. Mix the rice well with the garlic while frying. (this is
applicable for large rice quantities. If you are frying less than 4 cups of rice then
you can put all the rice at once assuming that your pan is large enough to handle
the volume.
5. Add the remaining half then cook for 5 minutes or until the rice is done.
6. Remove from the pan and place in a serving plate. Garnish with fried garlic on
top.

4. Siomai

Siomai in the Philippines is often ground pork, beef, shrimp, among others,
combined with extenders like garlic, green peas, carrots and the like which is then wrapped
in wonton wrappers. It is commonly steamed, with a popular variant being fried and
resulting in a crisp exterior.

Ingredients:

 Ready-made siomai
 1 tbsp cooking oil

Procedures:

1. Heat the frying pan and pour-in cooking oil.


2. Deep fry the wrapped wontons in medium heat for 5 to 7 minutes or until the
color of the wrapper turns golden brown.
3. Remove from the cooking pot and transfer to a plate lined with paper towels.
4. Serve and enjoy with soy sauce and calamansi with chilli paste.

5. Dumplings

Dumpling is a broad classification for a dish that consists of piece(s) of dough (made
from a variety of starch sources) wrapped around a filling or of dough with no filling. The
dough can be based on bread, flour, or potatoes, and may be filled with meat, fish, cheese,
vegetables, fruits, or sweets. Dumplings may be prepared using a variety of methods,
including baking, boiling, frying, simmering, or steaming, and are found in many world
cuisines.

Ingredients:
 Ready-made dumplings
 1/3 cup water
 1 tbsp cooking oil

Procedures:

1. Heat a wok or nonstick skillet over medium-high heat and add the oil. Add 10 to 12
potstickers at a time and cook for 2 to 3 minutes until the bottom is browned.
2. Add 1/3 cup water, cover, and steam the dumplings until the liquid is absorbed,
about 5 minutes. Remove and cook the remainder of the dumplings, adding water in
as needed (keeping the amount at about 1/3 cup).
3. Serve and enjoy!

6. Lumpia

Lumpia is a spring roll &It is a savoury snack made of thin crepe pastry skin called
"lumpia wrapper" enveloping a mixture of savory fillings, consists of chopped vegetables
(carrots, cabbages, green beans, bamboo shoots and leeks) or sometimes also minced meat
(chicken, shrimp, pork or beef). It is often served as an appetizer or snack, and might be
served deep fried or fresh.

Ingredients:

 1 tablespoon vegetable oil


 1 pound ground pork
 2 cloves garlic, crushed
 1/2 cup chopped onion
 1/2 cup minced carrots
 1/2 cup chopped green onions
 1/2 cup thinly sliced green cabbage
 1 teaspoon ground black pepper
 1 teaspoon salt
 1 teaspoon garlic powder
 1 teaspoon soy sauce
 30 lumpia wrappers
 2 cups vegetable oil for frying

Procedures:

1. Place a wok or large skillet over high heat, and pour in 1 tablespoon vegetable oil.
Cook pork, stirring frequently, until no pink is showing. Remove pork from pan and
set aside. Drain grease from pan, leaving a thin coating. Cook garlic and onion in the
same pan for 2 minutes. Stir in the cooked pork, carrots, green onions, and cabbage.
Season with pepper, salt, garlic powder, and soy sauce. Remove from heat, and set
aside until cool enough to handle.
2. Place three heaping tablespoons of the filling diagonally near one corner of each
wrapper, leaving a 1 1/2 inch space at both ends. Fold the side along the length of
the filling over the filling, tuck in both ends, and roll neatly. Keep the roll tight as you
assemble. Moisten the other side of the wrapper with water to seal the edge. Cover
the rolls with plastic wrap to retain moisture.
3. Heat a heavy skillet over medium heat, add oil to 1/2 inch depth, and heat for 5
minutes. Slide 3 or 4 lumpia into the oil. Fry the rolls for 1 to 2 minutes, until all
sides are golden brown. Drain on paper towels. Serve immediately.

7. Stick Fries

Ingredients:

 600g mashed potato


 1 egg
 3 tbsp milk
 2 tbsp corn flour
 Seasoning
 Oil for frying
Procedures:

1. Heat oil to 340°F/170°C


2. Make sure your mashed potato is cold before stirring in egg, milk, cornflour and
seasoning. If your mash is too stiff then use a stick blender to mix everything to a
smooth paste.
3. Add the mixture to a piping bag and snip the tip off then gently pipe the mash
straight into the hot oil. Cook for 1-2 minutes and turn over with a slotted spoon
then remove to a tray with paper towels and put in the oven to keep warm.

8. Snack Box

The Snack Box contains fried street food such as fishball, squidballs, kikiam,
hotdogs, siomai, and dumplings.

Ingredients:

 Ready-to-cook fishball, squidballs, kikiam, hotdogs, siomai, dumplings


 Cooking oil (Depends on quantity)
 1/3 cup water

Procedures:

1. Put cooking oil in the frying pan depends on the quantity of order.
2. Fry and cook all the ready-to-cook ingredients.
3. Serve and enjoy with sauce!

9. Hotdog

A hotdog is processed meat products by mixing chopped meat with various curing
ingredients. These can be in rice meal or snacks.

Ingredients:

 1tbsp cooking oil


 Processed hotdog (Ready-to-cook)
Procedures

1. Put cooking oil in the frying pan and heat it up for 30 seconds.
2. Cut the hotdogs in the middle with small cuts.
3. Cook the hotdogs and wait for them to darken in color.
4. Serve.

D.II. Beverages

1. Flavored Shake Beverages (per serving)

Ingredients:

 1 scoop of flavored powder (Cookies and cream, chocolate, mango,


taro, coffee)
 ¾ cup water
 2 cups of crushed ice
 1 tablespoon of pearls
 1 teaspoon sugar/sugar syrup

Procedures:

1. Add 1 scoop each of flavored powder , sugar or sugar syrup and ¾ cup
water into the blender and blend vigorously until powder is complete
dissolved.

2. Add 2 cups of ice and shake until a nice froth is formed.

3. Pour liquid over ¼ cup of tapioca pearls in the regular sized cup and enjoy!

2. Sago’t Gulaman (serves 4-6 persons)

The  sago at gulaman drink is sweet, thirst-quenching and popular during the


sizzling summer months. Agar-agar or gulaman is used to make the jellies. Gelatin powder
can also be used.
Ingredients :
 8 cups water
 1 bar gulaman (agar-agar), flaked (or 1 tbsp. gelatin powder)
 1-1/2 cups dark brown sugar
 1/2 cup dried tapioca pearls (sago), boiled (yield 2 cups)
 ice cubes

Procedures:

1. Prepare the Gulaman (Jelly): In a saucepan, bring 2 cups of water to a boil. Add


the gulaman (agar-agar) flakes; stir constantly over low heat until flakes are
completely melted (if using gelatin powder, stir until the powder is completely
dissolved). Transfer to a tray (or baking dish); set aside to cool at room temperature.
When cooled, it should be firm; cut into small dice using a knife.
2. Prepare the Sugar Syrup: In the same saucepan, bring the remaining water to a boil.
Add the sugar; stir constantly over medium heat for 5 minutes. Set aside to cool.
3. Place cooked tapioca pearls and jelly in glasses. Pour the syrup into the glasses; top
with ice cubes as desired. Alternatively, place them to a punch bowl with lots of ice
cubes on top.
4. Serve and enjoy!
D. Waste Disposal

To be inclined and to live with the values of Assumpta Technical High School, the
Unlibox will promote stewardship that assumes and owns. With this, the business will not
only care about making products to earn profit but more also on how to properly use and
dispose all the materials without harming any of the environment.

Proper disposing of waste especially in the kitchen area of the Unlibox will be
strictly observed and followed. It is very important so that the food and drinks that will be
served would not be contaminated. This also cares for the consumers’ health. To help in the
food park setting, the Unlibox will also have its business rules about following the
Assumpta Ecology Program (AEP). Unlibox will use paper products for its packaging
instead of plastics and Styrofoam. The business will also make the customers follow the
“Clean as you go” policy during their meal times by providing signage and trash bins. The
business through the help of the institution will encourage proper waste disposal through
having biodegradable and non-biodegradable trash bins around the food park and the
campus as well. Doing this so, the Unlibox can build a healthy and safe relationship with the
community especially the customers.
