1. Clean and sanitized the table.
2. Set up the table “ala carte set up”
3. Welcoming the guest.
4. Lay table napkin on the lap.
5. Introduce yourself to the guest.
6. Present the menu
7. Suggest the refreshing drink.
8. Go to the kitchen.
9. Get the pitcher and pour water to the water goblet.
10. Get the refreshing drink.
11. Ask the guest order.
12. Repeat the order.
13. Apply the suggestive selling.
14. Ask the about the hot beverage “Ma’am /Sir would do want to served your hot beverage together
with your dessert or after your dessert?”
15. After taking order go to the KITCHEN.
16. Set up the table according to the order of the guest.
17. Serve the complementary bread and say, “Ma’am/sir this is complementary bread. What would you
like, plain or toasted?”
18. Serve the food according to the order of the guest.
19. Before serving the main course get the BREAD AND BUTTER PLATE with bread and butter.
20. After main course get the SALT AND PEPPER SHAKER.
21. Clean the table before serving the dessert.
22. Before serving the dessert and hot beverages, place the dessert fork at the right side of the guest.
23. Serve the dessert at the left side of the guest and the hot beverages at the right side of the guest.
24. Get the coffee pot or tea pot with underline and pour the hot water to the cup.
25. Present the bill to the guest with the receipt facing down.
26. Get the money and say “I received _____ and I will be back for your change and receipt.
27. Give to the guest their change and say “Ma’am/ sir here is your change and receipt”.
28. Ask the guest about the food and service. You may say:
“Ma’am/sir how do you find our food? What about our service Sir/ Ma’am?”
29. Bid goodbye.

*After done eating get the soup plate and soup spoon.

(Note: if the underline of the soup or the salad plate was dirty, you should change the plate)

8. Serve the salad

Students: Excuse me! Ma’am/Sir this is spinach and apple with warm bacon dressing. Enjoy your
food.

*After eating, get the salad plate, salad fork, salad knife, bread and butter plate and butter spreader.

9. Before serving the white meat, serve the white wine.

Students: Excuse me Ma’am/ Sir. This is 2007 Dona Elena Pinot Blanc (Pe- ño bla) from France, It
has 13% alcohol and it complements well your white Meat. May I pour this to your glass?

Guest: Sure

Student: Add some more Ma’am/Sir?

Guest: Yes Please (Note: Add some more to the White wine Glass)

10. Serve the White Meat

Student: Excuse me! Ma’am/ Sir this is Roasted Chicken with Butter lemon Sauce. Enjoy your food.

*After eating, get the fish plate, dinner knife or fish knife, fish fork or dinner fork and white wine
Glass.

11. Before serving the red meat, serve the red wine.

Student: Excuse me! Ma’am/ Sir! This is 2009 Dona Elena Shiraz (shi-raz) a product of France, it has
13% alcohol contain and it is complement to your red meat. would you like to taste this wine now?
(Note: Pour a little bit of Wine)

12. Serve the Red Meat


Student: Excuse me! Ma’am/ Sir this is Braised veal Chunk with red wine and Shallots sauce. Enjoy
your food.

*After eating, remove the show plate, salt and pepper shaker, dinner plate, steak knife, dinner fork
and red wine glass.

13. Clean the table before serving the dessert.

14. Before serving the dessert, serve the sparkling wine.

Student: Excuse me! Ma’am / Sir, this is 2010 sparkling Wine from California, It has 5% alcohol
contain and it is good for your Dessert. May I pour you glass? (Note: Pour a little bit of Wine)

15. Before serving the Dessert, remove the dessert fork then place to the right side of the guest.
Student: Excuse me! Ma’am/ Sir this is your chocolate lava with caramel sauce. Enjoy your food.

* After done eating, remove the dessert plate, dessert fork and champagne Glass.

16. Serve the Hot Beverage.

(Note: for French service serve with the demitasse cup and saucer with hot chocolate or espresso

For Russian set up serve the coffee using cup or tea cup and saucer with coffee of tea.

17. Bill out.
