CONDUCT COMPETENCY ASSESSMENT

 Good morning, everyone! My name is SHELLA G. ESCUADRO. I am an accredited competency assessor for BREAD AND
PASTRY PRODUCTION NC II.

 I would like to acknowledge the presence of Ms. Miraflor B. Emata, our processing officer of this assessment center, Mr.
Juan de la Cruz, our Assessment Center Manager, and Ms. Neoruby R. Arenas, the representative from TESDA Provincial
Office Region 10.

 You don’t have to worry about their presence. They are here only to oversee the conduct of competency assessment and
to check if it is in accordance with the prescribed competency assessment methodology and procedures. They will not
assess you.

 Before I start, I will collect first the admission slip and check your ID.

 Here is your attendance. As I call your name, please affix the signature here.

 I have here with me your accomplished Self-Assessment Guide. This is an indication that you know and can perform all
the units of competency enumerated in this qualification.

 Welcome to Cagayan de Oro (Bugo) School of Arts and Trades. This will be the venue for your competency
assessment in BREAD AND PASTRY PRODUCTION NC II. The purpose of this assessment is to determine the level of
your competency.

 Today, I am going to administer competency assessment IN BREAD AND PASTRY PRODUCTION NC II. It is the
qualification level with four (4) basic competencies, five (5) common competencies, concurrent with the six (5) core
units of competencies namely:

1. Prepare and produce bakery products


2. Prepare and produce pastry products
3. Prepare and present gateaux, tortes and cakes
4. Prepare and display petits fours
5. Present desserts

 The different tasks to be performed for the assessment are the following: (WHOLE QUALIFICATION)
1. Soft Rolls
2. Swiss Roll
3. Decorated Round Chiffon Cake
4. Petit fours
 To determine your knowledge and skills in the qualification, the assessment methods to be used are demonstration and
interview.

 For your personal needs, the rest room is in front of this room. If you want to eat snacks and refreshment, there is a
canteen located at the end of the hallway. However, during the assessment you are not allowed to leave the assessment
center.

 If you have difficulty understanding the given instructions, please do not hesitate to inform me, I am willing to translate
it for you.

 But once the assessment has started, please refrain from asking questions, it is no longer allowed.

 During the assessment, if you have physical or any form of difficulties, don’t hesitate to call my attention, so that I can
address it immediately.

 Please observe safety precautions as you perform the different tasks. Observe proper body mechanics to avoid body
pains.

 In case of accident, please call my attention immediately so that I can provide you with first aid. The first aid cabinet is
located at the end corner of this room.

 In case you have some questions regarding the assessment results, you have the right to appeal. You can submit your
appeal to the TESDA Provincial Office Region 10 where this assessment center and I as your assessor are accredited.

 For the issuance of the National Certificate, you will be notified thru your active e-mail address a day after the
assessment.

 After the assessment, and you are found to be not yet competent, you can come back for re-assessment for the entire
qualification.

 If you failed in two consecutive assessments, you will be advised to undergo a refresher course before applying for re-
assessment.

 With regards to the results of your assessment, we observe strict confidentiality. This is to ensure your integrity. The
result is only made available to authorized personnel and to the institution where you had your actual training. Please
refrain from giving away any information that took place during the assessment process.

 Do you have any questions or clarifications?

 If none, I will now distribute the Specific Instructions to you. Please read the instructions carefully and answer all the
questions outlined in the document.

 If you need assistance, I will be more than willing to assist you.

 Are you done?

 I will now give you your assigned number. Here’s for you Candidate number 1. Candidate number 2, here is your
number.

 So, everybody must be very ready now. All candidates, please proceed to the Assessment area.

 This is the Assessment area. All the materials, tools and equipment required to complete the tasks are provided for you
to use. The tools/equipment needed for assessment is ready.

 At this point, I want you to read again the Specific Instructions. Please read them clearly and slowly.
 Candidate #1, you will start here at SOFT ROLLS
 Candidate #2, you will start here at SWISS ROLL
 If you are done on the task, you move immediately on the next task. Is that clear?

 Do you have any questions/clarifications? Please raise them now because as soon as the assessment begins you can no
longer ask questions.

 If there are no more questions, you may begin now.


(The assessor sets the time and uses the rating sheets to observe each candidate’s performance. The assessor will roam
around and observe)

After demonstration, let the candidate sit and proceed to oral questioning. (PREPARE THE ORAL QUESTIONS)

requirements of the qualification. I can say that you are COMPETENT on this qualification.

You may print your National Certificate from your email address, 3 working days after your assessment.

Here is also the Competency Assessment Results Summary. Please sign in the appropriate space. Thank you.

The assessment manager will distribute the CARS after signed.

For now, you may proceed to the TESDA representative for evaluation.

Also, I will try to change my negative attitude and try to focus and practice.)
